Tasting
Colour
A beautiful pale yellow colour, this wine is enhanced by delicate green hues.
Nose
Elegant, the nose reveals citrus aromas such as lemon and grapefruit, mingled with notes of ripe white fruit and delicate flowers. A lovely minerality reminiscent of wet chalk and gunflint rounds out this bouquet.
Palate
The attack is lively and supple, offering a palate of great freshness. The balance between fruit and natural acidity is remarkable, supported by a mineral framework of great purity. The persistent finish stands out with a subtle saline touch.
Food and wine pairing
This white wine pairs wonderfully with oysters, a seafood platter or grilled white fish. It also goes very well with sushi, creamy poultry dishes or fresh goat's cheese.
Service and storage
For optimal tasting, it is recommended to serve this Chablis 2024 at a temperature between 10 and 12°C, after a light aeration of about fifteen minutes. This wine can be enjoyed in its youth, but will continue to evolve favourably until around 2029.

The alcohol level of this vintage is between 12 and 12.8%. In addition, pH levels are slightly higher than historical averages.
The mineral purity of a great Chablis wine
The estate
Officially founded in 1959 with just seven hectares, Domaine William Fèvre is today a true benchmark in Burgundy. The vineyard now spans 70 hectares, offering a unique landholding in the region. Historically recognised for its respect for terroir and pursuit of excellence, the estate was acquired in January 2024 by Domaines Barons de Rothschild Lafite. Under the direction of Didier Séguier, the estate continues to uphold a strong environmental philosophy, producing wines that authentically express the full richness of their appellation.
The vineyard
This Chablis wine comes from a unique terroir characterised by Kimmeridgian soils, composed of marl and limestone rich in marine fossils. These steep, stony slopes bordering the Serein river give the vines an exceptional minerality. A pioneer in the region, the estate applies organic and biodynamic viticulture methods, certified High Environmental Value. The harvest is carried out exclusively by hand, allowing for rigorous sorting of the bunches right from picking.
The vintage
The year was marked by particularly challenging weather conditions. Following exceptional spring rainfall that led to early budbreak, the vineyard had to contend with frost in April, followed by a violent hailstorm in early May. Flowering took place amid unpredictable weather, and strong fungal pressure persisted throughout the growing cycle. Fortunately, a drier and sunnier August allowed the berries to reach full maturity before harvest began in late September.
Winemaking and aging
The philosophy in the cellar is based on minimal intervention in order to preserve the authentic expression of the terroir. For this Chablis 2024, the winemaking favours the use of seasoned barrels, averaging six years old, thereby avoiding new oak to preserve the wine's full purity and mineral tension.
