Tasting

Colour
The colour reveals a pale yellow hue enhanced by delicate green highlights, reflecting fine maturity.

Nose
The bouquet opens on a mineral backbone marked by notes of iodine, petrichor and oyster shell. It then evolves towards orchard fruit aromas such as white peach and pear skin, citrus fruit, along with subtle floral touches reminiscent of orange blossom.

Palate
The palate offers a dense, concentrated body with remarkable power. The crystalline, finely grained texture is perfectly balanced by a lively, taut acidity. The exceptionally long finish lingers on a deeply mineral, saline backbone.

Food and wine pairing

This white wine pairs wonderfully with seafood such as oysters, lobster or scallops. It also shines alongside poached fish, a green vegetable risotto, or white meats in cream and mushroom sauce. When it comes to cheese, it beautifully complements pressed or washed-rind cheeses from its region, such as Comté or Époisses.

Service and storage

To fully appreciate the complexity of the Chablis 1er Cru "Vaulorent" Domaine 2024, it is recommended to serve it at around 12°C. Thanks to its solid structure, this wine can be enjoyed young but will continue to evolve favourably until around 2039.

The mineral elegance of a great Chablis by William Fèvre

The estate

Officially founded in 1959 by William Fèvre with just seven hectares, the estate has established itself as an essential reference in Burgundy. Located in the heart of the Serein valley, the estate now oversees a 70-hectare vineyard spread across prestigious terroirs. A pioneer in sustainable, biodiversity-friendly practices, the estate has been run by Didier Séguier since 1998. Since January 2024, Domaines Barons de Rothschild has been the current owner of this winemaking jewel, upholding the house's excellence and environmental commitment.

The vineyard

This wine comes from the Vaulorent climat, an exceptional terroir of Chablis located on the right bank of the Serein. This vineyard enjoys a unique geographical position, sharing the same hillside as the appellation's famous leading crus. The vines, some of which are over sixty years old, thrive on Kimmeridgian soils composed of marl, clay and limestone rich in marine fossils. Benefiting from a dual south-east and south-west exposure, the plots enjoy optimal sunlight and excellent natural ventilation.

The vintage

2024 was marked by a hotter summer season. These weather conditions required great precision throughout the growing cycle and the harvest. Harvesting windows were particularly short in order to preserve the natural freshness of the berries while achieving optimal phenolic ripeness.

Winemaking and ageing

For this Chablis 1er Cru "Vaulorent" Domaine 2024, the grapes are hand-harvested in small crates and then carefully sorted. Whole-bunch pressing is followed by a light settling process. Fermentation takes place using indigenous yeasts. A portion of the must, representing 30 to 50%, ferments in used French oak barrels, with the remainder in stainless steel tanks. Ageing continues for 10 to 15 months on fine lees, with 40 to 50% of the wine resting in the same previously used barrels, thereby preserving a pure expression of the terroir.
