The 2021 Chablis 1er Cru Vaulorent is another highlight of the range, bursting with aromas of white flowers, sweet citrus oil, white peach and blanched almonds. Medium to full-bodied, satiny and seamless, it’s concentrated and complete, with racy acidity and a saline, orange blossom–inflected finish.

Fevre’s Vaulorent is just a little more precise on the nose. Seguier says it is always elegant, always fresh. Fevre’s take on this renowned premier cru has an understated nose, yet you can feel the power within. Lovely ripeness of fruit, but all in a very compact package at the moment. Although this is disarmingly approachable now, this will be a wine to cellar carefully, allowing all the perfectly formed components to blossom.

The 2021 Chablis Vaulorent 1er Cru is clean and precise on the nose: Granny Smiths, Alpine stream and light oyster shell scents unfold in the glass. The palate is well balanced with quite a powerful entry. More peppery in style, it gains weight towards the finish that gradually fans out. This leaves a good impression and beckons you back for another sip. Tasted blind at the Burgfest tasting.

The power and richness of a Chablis Premier Cru wine from William Fèvre

The estate

Founded in 1959, the William Fèvre estate has become an essential name among Chablis wines over the vintages. This illustrious Burgundy estate became part of the Henriot group in 1998.

William Fèvre oversees an exceptional terroir of 78 hectares of vines, including 15.9 hectares classified as Premier Cru and 15.2 as Grand Cru in Burgundy. Certified HVE (High Environmental Value) since 2015, this vineyard, through its mosaic of more than 90 distinct plots, enhances all the richness and diversity of the Chablis terroir.

The vineyard

"Vaulorent" Domaine 2021 is a Chablis Premier Cru wine that stems from a vineyard of 3.63 hectares facing south-east/south-west on a terroir made up of marls with quite deep soils and a subsoil rich in minerals and oyster fossils which give the mineral character typical of Chablis wines.

Winemaking and ageing

The grapes were harvested by hand and vatted through gravity. A short pneumatic pressing was followed by a light static settling. Alcoholic and malolactic fermentations were carried out for 30 to 50% of the must in French oak barrels aged 6 years on average, and in small stainless steel vats for the remainder of the harvest. The wine was aged for 10 to 15 months, including 4 to 6 months on fine lees, in the same containers as the fermentations.

Nose
The nose is powerful, mingling harmoniously citrus and white fleshed fruit scents with a mineral notes, typical of the appellation.

Rich and concentrated, the palate gives a remarkable freshness and length.

This white Burgundy wine pairs perfectly with fish, seafood and crustaceans in cream or grilled. It also pairs very well with poultry or white meats.
