The estate
The history of the house Vincent Girardin begins in 1980, when Vincent Girardin, then 19 years old and hailing from a lineage of winemakers dating back to the 17th century, started his activity with two hectares of vines passed down by his parents. Driven by passion and a true winemaker’s spirit, he quickly established himself among the leading figures of the Côte de Beaune. Founded in 1992, the estate has become over the years one of the major benchmarks of the Côte de Beaune. Since 2000, Éric Germain has upheld this standard by showcasing the remarkable terroirs of Meursault and Puligny-Montrachet.
The vineyard
This premier cru comes from parcels located in the heart of the famous climat “Les Combettes”, between Meursault and Puligny-Montrachet, in the southern part of the Côte de Beaune. The 70-year-old vines thrive on a poor, stony clay-limestone soil.
Vinification and aging
The harvest is carried out by hand, then the grapes are gently pressed at low pressure using a pneumatic press. The static settling takes place over 24 to 36 hours at a controlled temperature. Alcoholic fermentation and aging are carried out in barrels, 25 % of which are new oak, over 16 months.
