Colour
The wine shows a brilliant ruby hue with beautiful luminosity.
Nose
The aromatic bouquet delicately blends scents of fresh red berries, such as raspberry and redcurrant, with floral notes of peony. Subtle mineral touches evoking wet stone and herbal hints of infusion enrich the whole.
Palate
Slender and vibrant, the palate seduces with its precision and refreshing drinkability. The gourmand, fruit-driven attack gives way to a framework of finely polished tannins. The harmonious finish extends with a lovely mineral and saline tension.
Food and Wine Pairing
This red wine pairs wonderfully with roast poultry served with peas and sautéed potatoes. It will also elevate fine charcuterie, delicately grilled white meats and vegetarian dishes built around mushrooms and root vegetables.
Serving and Cellaring
To fully enjoy this wine, we recommend serving it at a temperature between 15 and 16°C. Already very approachable and charming in its youth, this wine also has a measured ageing potential that will allow it to gain in complexity after a few years of cellaring.
The Elegance and Minerality of a Red Wine from Bourgogne Hautes-Côtes de Nuits
The Estate
Heir to a long family tradition dating back to 1720, Domaine Thibault Liger-Belair was officially founded in 2001 by Thibault Liger-Belair, its current owner. Located in the heart of Burgundy, in Nuits-Saint-Georges, the estate tends a vineyard of approximately 8 hectares spread across prestigious appellations. Deeply committed to respecting the environment, the domaine farms all of its vines organically and biodynamically. Equipped with an eco-designed winery, Thibault Liger-Belair strives to produce wines with a distinctive identity, combining elegance and precision, which faithfully reflect the singularity of their terroirs.
The Vineyard
The cuvée comes from a 0.70-hectare plot located on the Chaux plateau, at an altitude of 400 metres. Planted in 1988, these vines of the Bourgogne appellation thrive on a very stony terroir, farmed organically. The soil is made up of a thin topsoil of iron-rich orange-red clay, resting on a free-draining base of lava stones and primary limestone. This high-altitude site and the unique nature of the soil give the berries remarkable freshness and tension.
The Vintage
This year's weather conditions proved particularly favourable to high-altitude terroirs. The growing cycle allowed the berries to retain a lovely natural freshness, resulting in a healthy harvest well suited to producing a wine with a particularly airy, precise and vibrant profile.
Winemaking and Ageing
After an entirely hand-picked harvest, the grapes are fully destemmed. Fermentation takes place over a period of around three weeks, favouring a very gentle, infusion-like extraction in order to preserve the delicacy of the fruit. The wine is then aged for 18 months in oak barrels, with a measured proportion of 30% new oak, which polishes the tannins and adds shape without masking aromatic purity.
