Nose
Aromas of spiced sherry-soaked raisins, accompanied by fragrant sandalwood and a delicate touch of cocoa powder.
Palate
Notes of dried apple slices blend with a gentle molasses sweetness, polished oak and sweet spices.
Pairings and Tasting Moments
This single malt is best enjoyed neat, or with a few drops of water, in a tulip or copita glass at a temperature of 18 to 20 °C. It is perfect for the end of a meal or for a contemplative moment. It pairs beautifully with desserts featuring dried fruits, chocolate and spices, caramelised apple tarts, or mild blue cheeses and mature hard cheeses.
Mixology
Although this is an exceptional product best enjoyed neat, it can be sparingly incorporated into minimalist cocktails that respect its structure, such as a barely sweetened Old Fashioned or a Manhattan variation, so as not to mask its remarkable aromatic complexity.

Founded in 2011 by Nigel Mills and Paul Currie, The Lakes Distillery has established itself as a major player in the revival of English spirits. Located in the picturesque Lake District, in Cumbria, the distillery transformed a former Victorian farm into a state-of-the-art production site. Far removed from traditional Scotch whisky, The Lakes asserts its own distinct identity, centred on a highly precise maturation philosophy and an exceptional mastery of sherry casks. Recently acquired in 2024 by the Nyetimber Wines and Spirits group, the estate is now under the direction of its current owner, Eric Heerema. With renowned creators at the helm of production, the distillery aims to become a global benchmark for luxury, combining natural terroir, technical precision and artistic aesthetics.
The Art of Maturation: The Whiskymaker's Edition Kairos
The Whiskymaker's Edition Kairos is an English whisky of great complexity, part of a series of limited editions celebrating the master distiller's creative freedom. The name "Kairos" draws its inspiration from ancient Greece, symbolising a precious, opportune moment frozen in time.
Crafted from 100% British barley, this spirit undergoes a long 96-hour fermentation before a slow, low-temperature distillation in copper stills. This meticulous method produces a fruity, vibrant distillate capable of supporting an intense maturation process.
The heart of its identity lies in its dynamic ageing process. The distillate evolves through a carefully selected range of American and Spanish oak casks that previously held oloroso sherry, pedro ximénez and red wine. This approach shapes a rich and bold aromatic profile, bottled at 46.6%. A true showcase of the distillery's craftsmanship, this edition captures the essence of a Mediterranean summer breeze while remaining true to the House's technical signature.
