Description
Tasting characteristics and advice for the Years in Cask 37 Years Fins Bois 1973 by Bache-Gabrielsen
Tasting
Nose
Expressive and complex, it reveals sparkling notes of rose and passion fruit. This floral and exotic bouquet is accompanied by a lovely vitality carried by citrus, along with a light rancio typical of highly mature spirits.
Palate
Fruity and robust, this cognac offers an elegant texture. It reveals indulgent notes of toasted coconut and toffee, balanced by the freshness of citrus and exotic fruits, leading to a long, velvety finish.
Food pairings and tasting moments
Best enjoyed neat at the end of a meal, this cognac is preferably tasted at a temperature of 25°C in a tulip glass to concentrate its aromas. It pairs wonderfully with desserts featuring coconut, exotic fruits (passion fruit, mango) or citrus, provided they are lightly sweetened. On the savoury side, a mild blue-veined cheese or a creamy soft cheese will enhance its caramel notes.
Mixology
Given its venerable age, its rarity and its status as an exceptional product, this cognac is intended to be enjoyed neat, without embellishment.
An exceptional, long-aged Fins Bois Cognac by Bache-Gabrielsen
Maison Bache-Gabrielsen: A Norwegian and Charentais alliance
Founded in 1905 by Norwegian Thomas Bache-Gabrielsen and his partner Peter Anton Rustad following the acquisition of Maison A. Edmond Dupuy, the House of Bache-Gabrielsen is an independent family business based in the heart of the Charente region. Now headed by Hervé Bache-Gabrielsen, a fourth-generation representative, the estate stands out for its dual Scandinavian and French identity. Renowned for its transparent and educational approach, the house works closely with local grape growers (bouilleurs de cru) to select spirits from diverse terroirs, enabling it to showcase a Fins Bois Cognac just as beautifully as a Grande Champagne. Under the expertise of cellar master Jean-Philippe Bergier, Bache-Gabrielsen combines respect for tradition, meticulous ageing and bold innovation to win over discerning enthusiasts around the world.
The excellence of single cask: Years in Cask 37 Years Fins Bois 1973
The Years in Cask 37 Years Fins Bois 1973 is an emblematic cuvée illustrating the House's commitment to showcasing long-aged spirits. Made exclusively from Ugni Blanc grapes grown in the village of Brie-sous-Matha, this vintage Cognac from 1973 comes from a terroir that is often underestimated, the Fins Bois, which here demonstrates an exceptional ageing potential.
Distilled under the guidance of master distiller Robert Briand, this single cask (cask number CI-39) benefited from a remarkable ageing process. It first aged for 37 years in Limousin oak barrels, developing a slow oxidation and a deep aromatic evolution. In 2011, it was transferred to a demijohn to rest for a further 11 years within the "Paradis", the cellar dedicated to the house's most precious spirits. This process helps stabilise the spirit while preserving its finesse.
Bottled in May 2022 in its natural colour, this rare product is presented in an elegant "Tradition" gift box or a white case, embodying the collection's philosophy of transparency by highlighting the length of cask ageing, offering complete clarity to enthusiasts of exceptional spirits.
