Appearance
The wine displays a delicate pale-yellow robe.

Nose
The aromatic bouquet reveals great complexity, dominated by scents of ripe fruit that harmoniously intertwine with subtle mineral nuances.

Palate
Ample, delicate and sophisticated, the palate unveils a fine structure. It masterfully combines power, subtlety and elegance, before stretching into a lingering finish, at once saline and tangy.

Food and wine pairings

This cuvée will pair beautifully with grilled langoustines, fish in sauce or flavourful white meats in a creamy preparation.

Serving and cellaring

To fully reveal the complexity of this Chablis 1er Cru "Montée de Tonnerre" 2024, it is recommended to serve it at a temperature between 10 and 12 °C. Endowed with fine ageing potential, this wine will be ideal to drink until around 2032.

The estate

Founded in 1840, the Simonnet-Febvre House is a historic institution located in the heart of Burgundy, in Chablis. Acquired in 2003, its current owner is the renowned Maison Louis Latour. Led by Paul Espitalié, this prestigious brand stands out for its production of still wines reflecting the purity of the Chablis terroirs, as well as for its unique expertise in crafting traditional sparkling wines. Today, the estate is increasingly moving towards environmentally friendly viticulture, while preserving the strong identity and international renown of its cuvées.

The vineyard

This great Chablis wine comes from an exceptional terroir situated on the right bank of the Serein, in the direct continuation of the famed Grands Crus. The vines, averaging fifty years of age, thrive on a small climat with a south-westerly exposure, bordering the ancient Roman road that once linked Auxerre to Tonnerre. They draw their unique character from the clay-limestone soils typical of the Kimmeridgian. Yields are carefully controlled at 48 hl/ha to ensure optimal concentration in the berries.

Winemaking and ageing

Fermentation of this Chablis 1er Cru "Montée de Tonnerre" 2024 takes place in stainless steel tanks, with temperatures rigorously maintained between 18 and 20 °C. The wine then benefits from meticulous ageing of twelve months on its fine lees. In order to bring complexity while preserving the mineral tension, this maturation phase takes place 25% in oak barrels and 75% in stainless steel tanks.

Grape variety

This cuvée is made exclusively from Chardonnay.
