The estate
Founded in 2016 in France, at the heart of Burgundy, Pierre Girardin estate is led by Pierre-Vincent Girardin, representing the thirteenth generation of his family. The winemaker cultivates 4.5 hectares of historic vines preserved by his father, complemented by more than 6 hectares in the Jura. Renowned for his innovative, minimal-intervention philosophy, the current owner favours biodynamic farming and the pure expression of terroir. Featuring an ultramodern winery since 2019, the estate stands out for its distinctive cuvées that challenge traditional conventions with remarkable precision.
The vineyard
Classified as Vin de France, the "Les Saugettes" plot is located in the Grusse locality, within the Jura vineyards. West-facing, the roughly fifty-year-old vines thrive on soils typical of calcareous marl. The estate applies limited yields here to concentrate the fruit's aromas. The vineyard's training system stands out for its raised trellises at two metres, promoting optimal aeration and natural protection against heat, all while fully respecting organic and biodynamic principles.
Winemaking and aging
The hand-harvested grapes undergo rigorous sorting before whole-bunch fermentation triggered by indigenous yeasts. The "Les Saugettes" Chardonnay 2023 is first aged for twelve months in specific 456-litre oak barrels, about 30% of which are new, to preserve the brightness of the fruit. The wine then rests for eight months in stainless steel tanks. Bottling is carried out without any fining or filtration.
