Australian viticulture was essentially founded by British settlers who arrived in the country in 1788. Australia produces reds, dry whites and sparkling wine. Gaining international repute, Australia has a total of 60 wine regions, which are spread from east to west. Most vineyards are concentrated in the south of the continent, the most famous of which are: the Hunter Valley, Clare Valley, Margret River (Sauvignon Blanc), McLaren Vale, Barossa Valley (famous for its Shiraz), Swan Valley, Mornington Peninsula and Yarra Valley (Pinot Noir, Chardonnay).

Kalimna Bin 28 Shiraz 2014 from Penfolds : a generous Australian red wine
A red wine made with Shiraz, the Kalimna Bin 28 Shiraz from Penfolds comes from vineyards in several regions (Barossa Valley, McLaren Vale, Langhorne Creek, Wrattonbully, Port Lincoln, Clare Valley). The ageing of the wine is carried out for 12 months in American hogsheads oak barrels.
At tasting, the Kalimna Bin 28 Shiraz 2014 from Penfolds presents a dark purple colour. The nose develops fragrances of black bean sauce that mingle with notes of anise, ginger, coffee beans and mocha. Upon aeration, one may detect notes of smoked meat. On the palate, the wine offers a nice volume and reveals itself to be generous. The wine also offers tasty touches of purple fruit (plums, black berries), before displaying creamy eggplant flavours. The tannins are very soft and offer a texture that is almost velvety.

The wine displays a very dark colour. It gives off graphite and blackcurrant notes, mark of the Cabernet Sauvignon. The wine then develops on tomato, cherry and red berry aromas to end on a barely perceptible wood touch. On the palate, the Penfolds 2014 Barossa Valley Bin 8 is medium-bodied and reveals an aromatic palette of praline, spices and fruits such as plum or redcurrant. It offers fine, woody and blended tannins.-

Pur Cabarnet Sauvignon, Penfolds Bin 407, comes from various parcels - mainly Mc Laren Vale, Coonawarra and Langhorne Creek- in South Australia. The 2012 vintage has a deep garnet color. The extremely inviting nose exudes black olives and charcoal aromas, as well as meat juice and rosemary. Bin 407 2012 palate is generous, rich and supported by wonderfully integrated tannins. The finish brings delectable chocolate, blueberry, or even fig flavors.

An elegant and powerful red wine from Heathcote
This cuvee has been produced by M. Chapoutier since 2002, Domaine Cambrien "La Pleiade" is a 100% Shiraz produced in the Heathcote appellation (the centre of the Victoria) in Australia. The vineyard is planted on an exceptionally rare soil, composed of virgin red soil that dates back to the Cambrian period. Harvest occurred at the end of March. The grapes were vinified for 6 weeks in open concrete vats and yeast was added. The wine matured in new French barrels for 12 months.
A deep magenta, Domaine Cambrien "La Pleiade" 2016 by M. Chapoutier develops complex aromas. Fragrances of red fruits and spices are perfectly paired together. Powerful and elegant in the mouth, this wine has a great mineral characteristic and has a precise attack. Ready to drink within two or three years until 2036.

The Bin 138 cuvee from Penfolds is 66% Shiraz, 23% Grenache and 11% Mataro. The wine was produced in the Barossa valley in the South of Australia.

The dense magenta coloured wine gives off red berry (raspberry) notes as well as liquorice aromas. At first closed on the nose, it then develops nice aromas. The Penfolds 2012 Barossa Valley Bin 138 is medium-bodied and marked by kirsch and brioche notes enhanced by white chocolate and mocha aromas that perfectly blend with round tannins.-

Bin 311 2015 from Penfolds : a Tumbarumba wine with a mineral finish
The Bin 311 from Penfolds is a Chardonnay white wine produced in the Tumbarumba appellation in the New South Wales region of Australia. The wine was aged for 9 months in French oak barrels.
At tasting, the Bin 311 2015 of Penfolds presents a straw yellow colour with shades of green. The nose develops citrus fragrances, mixed with apple, nashi pear, grated cucumber salad, peas and subtle floral notes. One may detect beautiful marine touches evolving in the glass. The wine is pleasant, powerful and seductive. The aromas of crushed biscuits and wet oats found in the wine have appeared naturally through ageing on lees with stirring. On the palate, the Bin 311 2015 reveals tasty touches of fresh nectarines and white fruit. There are subtle flavours of almonds, cashew nuts and Brazil nuts combine on this very seductive and creamy palate. The finish is elegant, revealing great minerality.

At tasting, the Penfolds Bin 389 Cabernet Shiraz 2014 displays a bright crimson red colour. The nose develops aromas of baker's yeast, crispy duck skin and cooking juices. It then releases fruity fragrances (rhubarb, quince, figs), followed by sesame oil and pine cone. Graphite and empyreumatic notes can then also be observed. On the palate, the wine reveals complex flavours of red currants, eggplant and black olives. Medium-bodied, it offers ripe and perfectly integrated tannins. The Penfolds Bin 389 Cabernet Shiraz 2014 reveals tasty touches of iron loaded meat, whetstone and olive oil, before blackberry cream and blueberries finally appear.

St Henri 2013 from Penfolds : a voluptuous, voluminous and velvety Australian red wine
St Henri from Penfolds is a red wine produced in Australia on various vineyards and appellations (McLaren Vale, Adelaide Hills, Barossa Valley, Clare Valley, Padthaway, Port Lincoln). St Henri 2013 comes from a blend of 96% Shiraz and 4% Cabernet Sauvignon. The wine is aged for 12 months in large oak vats, which are over 50 years old.
With its magenta colour and shades of purple, the St Henri 2013 from Penfolds develops a fruity nose with notes of black beans, star anise, dried herbs and sweet spices (cinnamon, thyme). Upon aeration, fragrances of salted beef with the freshness of a carpaccio reveal themselves in the glass, along with subtle notes of capers, vinegar and brine. On the palate, this very ample wine offers flavours of beetroot, game and the blackened crust of a roast. Then come tasty touches of blackberries and black fruit compote providing plenty of generosity and sweetness to this wine. Silky tannins and delicate acidity result in a very well-integrated wine. St Henri 2013 of Penfolds is voluptuous, voluminous and velvety.

This 2013 Shiraz St Henri follows in the blockbuster footsteps of the 2010 and 2012. The blend is 96% Shiraz with 4% Cabernet Sauvignon and the fruit sources are far and wide, including a real mix of terroirs: McLaren Vale, Adelaide Hills, Barossa Valley, Clare Valley, Padthaway and Port Lincoln. It spent 12 months in 50+-year-old casks. Deep garnet-purple colored, the youthfully reticent nose is complex, offering loam, aged meat, licorice, tar, scorched earth, fenugreek and cloves over a cherry cordial, blueberry pie and dried mulberries core. The medium to full-bodied palate reveals lovely, understated elegance and depth with a firm backbone of ripe, grainy tannins and many fruit and spice layers emerging on the finish. This multiplicity of parcels configuration enables to bring different tones to its Cabernet Sauvignon and its Shiraz, here blended by 57% (CS) and 43% (S). Both grape varieties provide a recognizable signature from the first olfaction, although at this stage the Cabernet Sauvignon dominates on the Shiraz. Very expressive, the nose displays hints of black olives, red fruits and a touch of minerality like graphite. Everything becomes more complex after swelling, with accents of smoke and leather. At first on the palate it appears to be relatively vibrating with a solid acid backbone balancing the whole. The tannic structure is typically Cabernet Sauvignon with a firm grain, present yet not basic. The retro-olfaction expresses rhubarb and some notes of spices. All is well built. Although one can enjoy it from now on, this wine can also be waited until 2020.

Cellar Reserve Pinot Noir 2007 from Penfolds : a round and balanced wine from Adelaide Hills
The Cellar Reserve Pinot Noir from Penfolds is a Pinot Noir red wine produced in the Adelaide Hills appellation of Australia. The wine is aged in oak barrels (50% in new barrels) for 9 months.
With its scarlet red colour, the Cellar Reserve Pinot Noir 2007 from Penfolds develops a complex nose, with notes of popcorn and sweet fruit. Upon aeration, aromas of cherries and cherry liqueur can be noted. The Cellar Reserve Pinot Noir 2007 reveals roundness and balance on the palate, along with tasty flavors of redcurrants and cherries, combined with notes of cold meat. The characteristics of ageing in oak and the tannins are perfectly integrated and give structure to the wine.

The 2007 Pinot Noir Cellar Reserve it was fermented with native yeasts, remained on its lees with minimal batonnage, and was bottled without fining or filtration. Medium ruby-colored, it offers up a fragrant perfume of cedar, smoke, violets, black cherry, and black raspberry. Silky on the palate with a bit of underlying structure, it has good depth and concentration, succulent fruit, and 3-4 years of aging potential. It should be at its best from 2011 to 2020.
