Tasting notes

Color
With beautiful brilliance and great luminosity, this wine displays a pale yellow hue.

Nose
With great precision, the nose first reveals an authentic vegetal character blending pine sap, fennel and white pepper. It then opens up to orchard fruit aromas such as pear and quince, enhanced by subtle aniseed touches and delicate floral notes reminiscent of chamomile.

Palate
The attack is round and harmonious, offering a lovely textural breadth. The mid-palate stands out with vertical tension and a dry structure, carried by great mineral vibrancy. Crystalline and elongated, the finish lingers on saline, peppery and aniseed notes.

Food and wine pairing

This white wine pairs wonderfully with raw or citrus-marinated fish, such as a scallop ceviche with lime, as well as with shellfish. It also goes very well with light herb-seasoned white meats, or roasted summer vegetables. It also proves perfect served as an aperitif.

Service and storage

Ideal to enjoy while young for its fruit, Mas Jullien "Les Derniers Etats d'Âme" 2024 can be appreciated until at least 2027. Stored under good conditions, it also has the mineral structure and acidity needed to evolve favorably over five to ten years.

The freshness and mineral tension of a white wine from the Languedoc

The estate

Founded in 1985 by Olivier Jullien, who remains its current owner, Mas Jullien is a key player in the qualitative revival of the Languedoc. Located in Jonquières, at the heart of the Terrasses du Larzac, the estate spans about twenty hectares. A true regional benchmark praised by the most prestigious critics, the estate stands out for its mosaic-style viticulture and deep respect for the environment. Refusing official certifications in order to preserve his intellectual freedom, Olivier Jullien crafts authentic wines here, guided by a biodynamic approach and a constant spirit of questioning.

The vineyard

The plots dedicated to white grape varieties are located on terroirs of moderate altitude, mainly composed of clay soils dotted with limestone pebbles, with some siliceous and sandstone nuances. Cultivated with very low yields, the vines benefit from natural cover crops and biodynamic preparations that encourage deep rooting. This unique terroir, classified as IGP Pays de l'Hérault, produces grapes of exceptional quality, harvested by hand at optimal ripeness.

The vintage

The year 2024 offered weather conditions that shaped a vintage distinguished by remarkable freshness and balance in the region.

Winemaking and aging

After manual harvesting and rigorous sorting, the grapes are crushed and pressed before an overnight settling process. Fermentation takes place using indigenous yeasts, separately according to grape variety and plot, mainly in 600-liter half-barrels (demi-muids). To preserve optimal vibrancy, malolactic fermentation is generally avoided. The "Les Derniers Etats d'Âme" 2024 cuvée is then aged on the lees for about a year, without stirring (bâtonnage), in wooden containers or sometimes in stoneware jars, with minimal cellar intervention.

Grape varieties

This blend is made up of Grenache Blanc, Carignan Blanc, Roussanne and Clairette. Depending on the year, Chenin or Bourboulenc may also complement this cuvée.
