Tasting notes
Colour
The colour reveals a brilliant pale yellow hue, enhanced by delicate green highlights.
Nose
The aromatic bouquet opens with fruity notes of yellow peach, harmoniously complemented by a subtle touch of muscat grape evoking fine white flowers.
Palate
Full and generous, the palate reveals a beautiful aromatic depth carried by flavours of apricot, fresh walnut and honey. The whole is supported by perfectly balanced acidity that gives the wine a persistent freshness.
Food and wine pairing
This white wine pairs ideally with seafood, shellfish or grilled fish. It will also go wonderfully with fish in a creamy sauce, poultry such as poularde with cream, as well as regional cheeses like Époisses or brie.
Service and storage
For optimal tasting, it is recommended to serve this Chassagne-Montrachet Village 2023 at a temperature between 10 and 12°C, taking care to pour it around 15 minutes before serving. This wine can be enjoyed now and will continue to evolve until around 2028.
The estate
Officially founded in 1797 in Beaune, Maison Louis Latour is a historic institution of Burgundy. This estate spans 50 hectares, 29 of which are classified as Grand Cru. A pioneer of sustainable viticulture, the estate has been ISO 14001 certified for nearly twenty years. Today, Florent Latour is at the helm of the estate. He succeeded his brother in 2022, continuing the family's legacy of excellence while adapting the estate to contemporary climate challenges.
The vineyard
Located on the Côte de Beaune, the terroir of the Chassagne-Montrachet appellation stands out for its limestone and clay soils. The vines, planted at an altitude ranging between 220 and 325 metres, benefit from an ideal east and south-east exposure. This moderate continental climate, rich in microclimates, allows for slow berry ripening. The estate applies environmentally friendly methods, favouring organic techniques, the use of natural compost and cover cropping between rows to preserve biodiversity and soil health.
The vintage
The year 2023 stood out for its particularly generous yields, requiring an adaptation of the winery's infrastructure to accommodate this abundant harvest. The climatic conditions of this vintage helped shape a wine imbued with lovely freshness and pronounced minerality.
Winemaking and aging
This Chassagne-Montrachet Village 2023 is vinified traditionally in oak barrels, accompanied by complete malolactic fermentation. The wine is then aged for 8 to 10 months in oak barrels, 15% of which are new, to bring a slight complexity without masking the mineral expression of the terroir.
