Tasting
Colour
This white wine from France reveals a pale golden yellow colour of moderate intensity and brightness.
Nose
The aromatic bouquet opens with notes of white-fleshed fruit, reminiscent of green apple and pear. It is then enriched with delicate touches of white flowers, underscored by a fine minerality.
Palate
The palate offers remarkable concentration and depth, carried by a pronounced minerality. The vibrant acidity perfectly balances the fruity expression, revealing an elegant structure with medium body. The finish lingers on beautiful saline and mineral notes.
Food and wine pairing
This wine pairs wonderfully with oysters, mussels marinière, grilled white fish or delicate shellfish. It also goes very well with goat cheese, fresh citrus salads, as well as vegetarian dishes such as risotto or vegetable gratin.
Service and storage
To fully enjoy this Chablis Village "Héritage" 2023, it is recommended to serve it at a temperature between 6 and 10°C. While already very enjoyable in its youth, it has fine ageing potential and can be drunk until around 2031.

The authentic expression of a great Chablis terroir by Domaine Jean Dauvissat
The estate
The family's winemaking history began in 1899, but it was in 1963 that Domaine Jean Dauvissat produced its first bottlings. Located in Milly, at the heart of Burgundy, this estate now spans 22 hectares. Since 2009, Fabien Dauvissat has been at the helm of the estate and has brought a genuine spirit of renewal. Under his guidance, the vineyard obtained organic certification in 2014 and is now moving towards biodynamics. Independent from other families of the same name, this producer stands out for its minimal-intervention approach, faithfully revealing the diversity of its terroirs.
The vineyard
The grapes for this cuvée come from the plateau of la Chapelle Vaupelteigne, within the Chablis appellation. This terroir is characterised by clay-limestone soils rich in small stones, resting on the famous Kimmeridgian geological bedrock. The vines, planted in the 1950s, have an average age of seventy years. Their roots plunge deep into the limestone rock, naturally yielding low yields but of great concentration. The vineyard work is carried out with the utmost respect for biodiversity, with hand-harvesting and the use of horses to preserve the soils.
The vintage
2023 began with a particularly mild winter, followed by a rainy and unpredictable spring that favoured fungal pressure. Summer was then marked by a prolonged period of drought. Fortunately, weather conditions in late summer and September proved warm and ideal, allowing the berries to reach optimal ripeness. Harvesting was thus able to begin around 10 September, yielding a crop combining both quality and quantity.
Winemaking and ageing
The production of the Chablis Village "Héritage" 2023 follows a natural, minimal-intervention philosophy. After careful sorting, fermentation begins spontaneously thanks to indigenous yeasts, on a plot-by-plot basis, in stainless steel tanks. Ageing then continues on fine lees for 18 to 24 months. For this particular cuvée, part of the wine undergoes ageing in oak barrels, adding extra complexity while preserving the purity of the fruit.
