Description
Characteristics and tasting notes for the Saint-Aubin 1er Cru 2025 by Jean Chartron
Tasting
Appearance
The wine reveals a pale, luminous hue, reminiscent of green gold or light lemon yellow.
Nose
The bouquet opens with lovely floral and mineral complexity, revealing aromas of citrus and white-fleshed fruit, subtly enhanced by notes of sweet spices and vanilla.
Palate
Structured and linear, the palate displays remarkable tension. It stands out for its pronounced minerality and caressing texture, stretching into a long, savoury finish.
Food and wine pairings
This white wine pairs beautifully with seafood such as pan-seared scallops, lobster or grilled fish. It also makes an elegant match for white meats in a creamy mushroom sauce, as well as young cheeses such as Brie or young Comté.
Serving and ageing
To fully appreciate this Saint-Aubin 1er Cru 2025, it is best served at a temperature between 13 and 15°C. Aerating the wine for 30 to 60 minutes before tasting is recommended. This wine has good ageing potential and will continue to develop gracefully in the cellar for several years.
The elegance and minerality of a great white Burgundy
The estate
Officially founded in 1873 by Jean-Edouard Dupard, Domaine Jean Chartron is a historic name in Puligny-Montrachet, in the heart of Burgundy. Now run by Jean-Michel Chartron, the fifth generation of the family, the estate covers 14.5 hectares of vines. The domaine is distinguished by its meticulous, environmentally respectful approach to viticulture, favouring practices close to organic farming. Drawing on its prestigious terroirs, Jean Chartron crafts wines renowned for their precision, elegance and ability to faithfully express the richness of their climats.
The vineyard
The plots used for this wine lie on the high-altitude terroirs of the Saint-Aubin appellation, between 300 and 350 metres. Set on gentle, well-drained slopes, the vines thrive in shallow, very stony clay-limestone soils, which are sometimes rich in ferruginous marl. Since 2004, the domaine has farmed these vineyards organically, though without certification, and the grapes are harvested entirely by hand to guarantee the quality of the fruit.
Vinification and ageing
After gentle whole-bunch pressing, this Saint-Aubin 1er Cru 2025 is fermented entirely in oak barrels, around 25% of which are new. The wine is then aged on fine lees for twelve months in barrels, without bâtonnage to preserve its tension, before resting for four months in tank prior to bottling.
Grape variety
100% Chardonnay.
