Tasting
Colour
The wine displays a pale, luminous yellow hue, enhanced by delicate green highlights.
Nose
The nose opens with lovely minerality, releasing aromas of citrus and white flowers. Subtle marine touches and fine vegetal notes add further depth to this complex bouquet.
Palate
The attack is clean and precise. The palate stands out for its fine tension and lively acidity, revealing flavours of citrus and white-fleshed fruit. The very long finish displays remarkable salinity.
Food and wine pairings
This white wine pairs beautifully with oysters, seafood or delicate fish. It will also be a fine match for white meats, spring vegetables or aged goat's cheeses.
Serving and cellaring
This 2024 vintage can be enjoyed in its early years, but it also has the potential to evolve, allowing it to be cellared until around 2034.
A pure, mineral white wine from Chablis
The estate
Founded in 1880 in Beaune, the family-owned Maison Joseph Drouhin gradually extended its footprint across Burgundy. It was in the late 1960s that the house established itself in Chablis. Now run by the fourth generation, represented by Frédéric, Philippe, Véronique and Laurent Drouhin, this Chablis estate bears the name Drouhin Vaudon. A pioneer in its environmental approach, the estate stands out for its deep commitment to organic and biodynamic viticulture, producing wines renowned for their purity and faithful expression of their terroir.
The vineyard
The Drouhin Vaudon estate tends a vineyard of around 38 hectares in the heart of the Chablis appellation. The densely planted vines thrive on Kimmeridgian limestone soils rich in marine fossils. Farmed entirely according to organic and biodynamic principles, this terroir receives meticulous care, including regular ploughing and strict yield control to promote concentration and mineral expression in the grapes.
Winemaking and ageing
After hand harvesting, the berries are pressed very gently to preserve the purity of the juice. Fermentation and ageing then take place in stainless steel tanks under rigorous temperature control. Ageing lasts 7 to 8 months, with no new barrels used, in order to retain all the freshness and typicity of the terroir.
