The estate
Founded in 1991 by Paris Sigalas on the volcanic island of Santorini, Domaine Sigalas stretches across family vineyards with exceptionally low yields of 11 hl/ha. Led by Paris Sigalas, recognized as one of Greece's best winemakers, the estate has practiced organic viticulture since 1994. The vines, cultivated using the traditional kouloura method, produce intensely mineral wines that perfectly express the unique volcanic terroir of the Cyclades.
The vineyard
Shaped by powerful volcanic eruptions 3,700 years ago, Santorini's sublime terroir nearly disappeared forever. Fortunately, the outcome was quite different: like true architects, the winemakers of these exceptional Cyclades terroirs managed to build what would become one of the oldest vineyards in the world: its volcanic soil, basket-shaped vines, and the unique climate of the Oia plain shape this exceptional terroir.
The wine
Assyrtiko Kavalieros comes from a unique vineyard located in the village of Imerovigli on the island of Santorini. Vines over 60 years old thrive in this small plot with its exceptional volcanic terroir, benefiting from the Cyclades' particular climate and the proximity of the Aegean Sea.
Vinification and aging
Careful hand sorting of the grapes on a sorting table. Whole bunches undergo gentle, extended pressing before fermentation in temperature-controlled stainless steel tanks. The wine then enjoys 18 months of aging on the lees in tank, with regular stirring during the first few months, then as needed.
