Appearance
A pale, luminous colour characterises this white wine.
Nose
The bouquet unveils a legendary olfactory signature, marked by remarkable freshness. It exhales floral and menthol notes, harmoniously mingled with aromas of citrus fruits such as lemon and lime, white fruits such as apple and pear, along with subtle hints of honey.
Palate
From the first sip, the palate delivers an immediate sense of richness, at once supple and harmonious. This lushness is instantly balanced by an acidic, mineral framework that brings verticality. The finish proves long, subtle and of great purity.
Serving and cellaring
This Chassagne-Montrachet Village 2023 requires a period of bottle ageing before it can be fully appreciated. Blessed with a solid structure, it boasts remarkable cellaring potential, allowing it to evolve favourably over several decades.

The estate
Legally established in 1985, although its heritage dates back to the 1920s with Pierre Ramonet, Domaine Ramonet is an iconic figure of Burgundy. This vineyard of around 17 hectares, rooted in the Côte de Beaune, is today under the direction of Jean-Claude Ramonet, alongside his daughter Anne-France. Renowned for having been a pioneer in exporting its bottles to the United States, the estate distinguishes itself through an exacting philosophy. By favouring very old vines and particularly low yields, it crafts cuvées of exceptional purity.
The vineyard
The berries for this cuvée come from the commune of Chassagne-Montrachet. The terroir consists of a mosaic of predominantly limestone and marl soils, offering optimal drainage and a beautiful exposure. The estate devotes meticulous care to its plant material, made up of vines around sixty years old. To ensure maximum concentration, yields are deliberately restricted. This village wine also stands out through the inclusion of grapes from declassified premier cru plots, which lends it a singular depth.
Winemaking and ageing
The cellar favours a respectful approach aimed at sublimating the expression of the terroir. For this vintage, vinification is accompanied by patient ageing on the lees. The use of new oak barrels remains very moderate so as not to mask the brilliance of the fruit and to preserve the mineral tension that characterises the house style.
