Food and wine pairings
This great white wine is an ideal companion for delicate shellfish such as king crab, langoustine or roasted lobster. It also enhances pan-seared scallops, poultry served with a creamy mushroom sauce, and white truffle risottos. Finally, it pairs beautifully with characterful cheeses such as an aged Comté or a mature goat's cheese.
The pure, mineral expression of a great Pouilly-Fuissé terroir
The estate
Founded in 2007 by Fabien Duperray, a former broker with a passion for great wines, Domaine Jules Desjourneys quickly established itself as an essential reference. Located in La Chapelle-de-Guinchay, on the border between Beaujolais and southern Burgundy, the estate now covers around 25 to 27 hectares. Still led by its founder, the domaine stands out for a rare level of viticultural rigour, certified organic and biodynamic. Thanks to a collaboration initiated in 2014 with Christophe Thibert, the estate produces white wines from the Mâconnais of remarkable precision, rivalling the most prestigious Burgundian appellations.
The vineyard
This Pouilly-Fuissé comes from the prestigious "Vignes Blanches" climat, an exceptional terroir located mid-slope above the village of Fuissé. The vines thrive on a steady and pronounced gradient of around 23%, benefiting from an ideal south and south-east exposure. The soils, made up of clays lying on a bedrock of cherty limestone, provide excellent drainage while retaining a valuable water reserve. The vineyard is cultivated according to the strict principles of biodynamics, with deliberately low yields and all work carried out entirely by hand to ensure optimal grape concentration.
Winemaking and aging
The creation of the Pouilly-Fuissé "Vignes Blanches" Village 2022 reflects a philosophy of precision and respect for the fruit. Fermentations are triggered naturally by indigenous yeasts. Aging, lasting a total of 18 to 22 months, begins with 11 months in old oak barrels, with no new wood used, in order to preserve aromatic purity. The wine is then refined in stainless steel tanks on its fine lees. Finally, bottling is carried out with very light, if any, filtration, in order to retain all the density and complexity of the material.
