Tasting
Colour
The colour reveals a brilliant ruby hue, promising subtle garnet reflections over the years.
Nose
Wonderfully pure, the bouquet opens with aromas of morello cherry and red berries, enhanced by floral notes of violet and rose. With aeration, a fine minerality emerges, accompanied by delicate spicy and subtly oaky touches.
Palate
The attack is rounded and delicate. The palate seduces with its velvety texture and silky, well-integrated tannins. An intense mineral thread runs through the tasting, leading to an elegant, taut finish with great freshness.
Food and Wine Pairing
This red wine pairs wonderfully with roasted poultry, filet mignon or beef dishes with mushrooms. It will also enhance feathered game such as duck, pigeon or partridge, as well as soft cheeses.
Service and Storage
For an optimal tasting experience, it is recommended to serve this Volnay 1er Cru "Les Caillerets" 2023 between 15 and 16°C, taking care to aerate it moderately beforehand. This wine can be enjoyed in its youth but will continue to evolve favourably until around 2031.

The Estate
Founded in 1885 and located in Meursault, Domaine Henri Boillot is an essential reference in Burgundy. Spanning around fifteen hectares, the estate stands out for its environmentally responsible approach and its absolute quest for precision. Today, the estate is run by Henri Boillot, who focuses on white wines, while his son Guillaume Boillot oversees vineyard work and the winemaking of red wines. Together, they carry on a historic family expertise, producing cuvées that authentically express the richness of their terroirs.
The Vineyard
This Volnay 1er Cru "Les Caillerets" 2023 comes from a renowned climat located in the south of the appellation, on the border of Meursault. Facing east and south-east, at an altitude of between 260 and 290 metres, the vines thrive on marl-limestone soils rich in small pebbles. Some plots contain old vines over sixty years old. The estate practises highly sustainable farming, without chemical herbicides, with limited yields and hand-harvesting to ensure optimal berry quality.
The Vintage
2023 is recognised as an exceptional year in the region. Weather conditions allowed for ideal phenolic maturity to be reached while preserving the freshness essential to the balance of the berries. This favourable growing cycle produced perfectly defined and vibrant fruit.
Winemaking and Aging
After a rigorous selection of grapes in the vineyard and then in the cellar, the winemaking of the Volnay 1er Cru "Les Caillerets" 2023 is carried out with minimal intervention and without chemical additives. The wine is then aged for 18 months in 228-litre French oak barrels, preserving the original expression of the terroir.
