Tasting
Colour
The colour reveals a deep, saturated red hue.
Nose
The nose reveals lovely aromatic intensity, combining notes of black fruit, cherry jam and violet. It then opens onto spicy, smoky and mineral touches evoking graphite, incense and liquorice, along with scents of garrigue.
Palate
On the palate, the wine offers a dense, deep texture, supported by powdery tannins of great finesse. The balance is remarkable between the generosity of the black fruit, herbaceous accents and a lovely mineral tension. The finish stands out for its very fine persistence.
Food and wine pairing
This red wine pairs wonderfully with rich, herb-scented meat dishes, such as a shoulder of venison with thyme, a Provençal beef daube or a duck breast with black fruit.
Service and storage
Ready to enjoy now after decanting in its youth, this "Vieilles Vignes" 2022 will reach its peak between 2026 and 2034, and can be kept until around 2037. It is recommended to serve it at a temperature between 16 and 17°C.
The elegance and depth of a red wine from Roussillon
The estate
Born at the beginning of the 20th century with just a few ares of vines, Domaine Gauby has become a true benchmark in Roussillon. Located in Calce, the estate spans 85 hectares, including 44 hectares of vineyards. A pioneer of biodynamics in the region, the estate stands out for its environmentally respectful approach and its quest for freshness. Since March 2024, Yann Mazabraud and François Baulé have been the new owners of the property, succeeding the founding family while continuing this philosophy of excellence.
The vineyard
Located in the commune of Calce, at an altitude of between 150 and 300 metres, the vineyard grows on steep, arid, wind-swept terrain. The vines, aged between 30 and 95 years, root deeply into a complex geological mosaic made up of sedimentary limestone, marl and iron-rich schist. Cultivated biodynamically with very low yields, this terroir within the IGP Côtes Catalanes also benefits from an innovative agroforestry programme designed to preserve the freshness of the berries against summer heat.
The vintage
2022 was marked by a particularly hot summer season, favouring complete phenolic ripeness of the berries. Faced with these high temperatures, rigorous canopy management, some early harvesting and the benefits of the agroforestry programme helped preserve the vines' freshness throughout the growing cycle.
Winemaking and ageing
The grapes for the "Vieilles Vignes" 2022 are harvested by hand in small crates, with rigorous double sorting both in the vineyard and at the winery. Vinification takes place using whole bunches with a two- to four-week maceration in stainless steel and concrete tanks, followed by gentle pressing. Fermentation starts naturally thanks to indigenous yeasts, with no additives whatsoever. Ageing then takes place over 18 months in old foudres and concrete tanks, followed by 5 months of resting in bottle. The wine is neither fined nor filtered.
