Tasting

Colour
A bright, pale gold hue, the visual appeal is enhanced by a particularly pronounced green tinge.

Nose
The nose opens with great floral and herbaceous freshness, blending orchard blossom scents with dill, mint and verbena, heightened by a hint of lemon zest and notes of green peas. With aeration, the bouquet gains richness with aromas of stewed white fruits, quince jelly and almond biscuit, all wrapped in a subtle touch of flint and sweet spices.

Palate
The palate offers a fluid, juicy and highly expressive texture. It reveals delicious notes of pear and apple coulis, along with hints of apricot and orange jam. The whole is perfectly balanced by a spicy thread reminiscent of Espelette pepper, leading to a remarkably persistent finish, vibrant and energetic, marked by nuances of Sichuan pepper and saffron.

Food and wine pairing

In its youth, this wine pairs beautifully with pan-seared clams or razor clams with parsley butter. After a few years of ageing, it will elevate a seafood casserole, saffron-infused monkfish or a cod parmentier. It also pairs very well with sea bass carpaccio with pink peppercorns or snails in porcini cream sauce.

Service and storage

For optimal tasting, it is recommended to serve this Bourgogne Hautes-Côtes de Beaune 2023 at a temperature between 11 and 12°C, ideally in Burgundy glasses. A vigorous decanting of 15 to 30 minutes is recommended in its youth. This wine can be enjoyed from now and will continue to evolve favourably until around 2035.

The estate

Founded in 1991, Domaine François Mikulski is located in Meursault, at the heart of Burgundy, France. Now run by its founders, François and Marie-Pierre Mikulski, the estate spans approximately 9.5 hectares of vines. The domaine stands out for its philosophy centred on authenticity, purity and elegance, applying methods that respect living systems. The observation of lunar cycles, ploughing with horses and a minimally interventionist approach in the cellar all contribute to vibrant cuvées that faithfully express the richness of their terroirs.

The vineyard

This Burgundy wine comes from two organically farmed plots, located at altitudes between 350 and 500 metres, near Nolay and Meloisey. Resting on clay-limestone soils, these vines benefit from a cooler climate that delays budbreak and protects against frost, while ensuring slow, steady grape ripening, particularly in warmer years.

The vintage

The year 2023 falls in line with warm, sun-drenched vintages. Thanks to the altitude of the plots, the vines benefited from more moderate summer temperatures, allowing the berries to reach optimal, even ripeness while preserving lovely freshness.

Winemaking and ageing

After hand-harvesting, the winemaking of the Bourgogne Hautes-Côtes de Beaune 2023 begins with gentle pressing. Fermentation occurs naturally through the action of indigenous yeasts. The wine is then aged on the lees for 10 to 12 months in oak barrels, incorporating about 20% new wood, with the remainder being one- to three-wine barrels, in order to preserve the brightness of the fruit.
