Tasting
Colour
The wine reveals an intense golden hue, enhanced by subtle green highlights.
Nose
Complex and enticing, the nose combines citrus aromas (lemongrass, lemon zest) with delicate toasted notes from the ageing process. It then opens onto hints of exotic fruits and elegant white flowers, reminiscent of acacia.
Palate
The attack is crisp and mineral, evolving into a rich palate with flavours of vineyard peach and exotic fruits. The balance is perfect between a silky texture and refreshing acidity. The finish, long and saline, beautifully reflects its limestone terroir.
Food and wine pairings
This white wine pairs wonderfully with fresh seafood such as sole meunière, shellfish (langoustines, lobster) or scallops. It also goes very well with foie gras, poultry in cream sauce, as well as cheeses such as goat's cheese, Reblochon or Brie de Meaux.
Serving and cellaring
For optimal tasting, it is recommended to serve this wine between 12 and 14°C, after decanting it just before serving in a standard white wine glass. The estate
Founded in 1825 by Pierre Faiveley, Domaine Faiveley is a historic figure in Burgundy. Initially a négociant house, the family patiently built up a vineyard that today extends over more than 120 hectares across the Côte de Nuits, the Côte de Beaune and the Côte Chalonnaise. Currently run by Eve and Erwan Faiveley, the seventh generation, the estate combines respect for tradition with modern environmental practices, having obtained organic certification in 2025. The estate strives to express with precision the uniqueness of each terroir.
The vineyard
The climat of this Puligny-Montrachet is located on the upper slopes of the hillside, offering an ideal south-south-east exposure. The vines, around 35 years old, thrive on light, stony topsoils resting on a subsoil rich in limestone and scree. This unique terroir, cultivated according to the principles of organic farming, encourages deep rooting and gives the wine its characteristic minerality.
Vinification and ageing
After manual harvesting and rigorous sorting, the berries of this Puligny-Montrachet 1er Cru "La Garenne" Joseph Faiveley 2023 are destemmed without crushing. The transfer is carried out by gravity into wooden vats. Alcoholic fermentation begins naturally thanks to indigenous yeasts, followed by a spontaneous malolactic fermentation. Ageing takes place over a period of 8 to 10 months in French oak barrels (50% of which are new), in the estate's historic vaulted cellars dating from the nineteenth century.
