Tasting
Appearance
The wine reveals a pale golden hue, both clear and bright.
Nose
Radiant and enticing, the nose releases aromas of green apple and pear, harmoniously blended with floral notes of orange blossom and citrus. Delicate touches of lemon zest and a very subtle oak finish complete this vibrant bouquet.
Palate
Precise and luminous, the palate charms with its supple, silky texture. It reveals a beautiful core of white fruits underpinned by a racy acidity, stretching towards a full and deeply mineral finish.
Food and Wine Pairing
This white wine pairs wonderfully with a blanquette de veau, pike in cream sauce, or goat cheese gougères. It will also complement poultry in sauce, delicate white fish, as well as pressed cheeses such as a young Comté.
Serving and Cellaring
To fully appreciate the Pouilly-Fuissé "Village" 2023, it is recommended to serve it between 10 and 12°C, opening the bottle half an hour before tasting. This wine will reveal its aromas from now on and can be cellared until around 2030.
The Precision and Mineral Freshness of a White Wine from Pouilly-Fuissé
The Estate
Located in the heart of the village of Pouilly, at the foot of the famous Roche de Solutré in Burgundy (France), the Domaine du Roc des Boutires was established in its current form in 2016 when it was taken over by the Parinet family. Also owners of Château du Moulin-à-Vent, the family instills a highly demanding plot-by-plot working philosophy. The estate covers a confidential surface area of approximately 4.8 hectares in total. Boasting an old vineyard planted in the 1970s, it now stands as an essential signature of the Mâconnais.
The Vineyard
The grapes for this Pouilly-Fuissé come from four distinct plots: "A la roue", "Barvay", "Aux Combes" and "En Bertilionne". These vines, aged between 40 and 45 years, thrive on a geological mosaic ranging from deep clays to hard limestones, including silty-clay and marl-limestone soils. The harvest is carried out manually in small crates to preserve the integrity of the berries.
The Vintage
The 2023 vintage is characterised by rather cool climatic conditions in the south of the region. Moderate temperatures and well-distributed rainfall helped to avoid any severe water stress. This weather encouraged a slow and gradual ripening of the berries, thus preserving excellent natural acidity.
Vinification and Ageing
Transported by gravity, the grapes undergo whole-bunch pressing followed by cold static settling. For this Pouilly-Fuissé "Village" 2023, fermentation and ageing on fine lees last approximately 15 months. Ageing takes place 80% in stainless steel tanks and 20% in French oak barrels, with very rare use of bâtonnage in order to preserve all the tension of the wine.
