Description
Characteristics and tasting notes of the Pouilly-Fuissé 1er cru "Aux Bouthières" 2023 from Domaine du Roc des Boutires
Tasting
Appearance
The wine reveals a bright, pale gold hue, enhanced by delicate silvery reflections.
Nose
Beautifully complex, the aromatic bouquet blends notes of white and yellow fruits, such as pear and apricot, with citrus touches like Meyer lemon. Nuances of fresh bread, nutmeg and jasmine intertwine with a stony minerality and a subtle saline hint.
Palate
Medium-bodied, the palate of this white wine seduces with its round, unctuous texture, perfectly balanced by a lively, mouth-watering acidity. The mineral expression extends to a penetrating, long and delicately saline finish.
Food and wine pairings
This wine pairs beautifully with refined seafood such as pan-seared langoustines or a scallop carpaccio, as well as with delicate white meats like veal sweetbreads.
Serving and cellaring
To fully appreciate this Pouilly-Fuissé 1er cru "Aux Bouthières" 2023, it is recommended to serve it at a temperature between 10 and 12°C, taking care to open the bottle about 30 minutes before tasting. This cellaring wine can be enjoyed now and will evolve favourably until around 2045.

The estate
Acquired in 2016 by the Parinet family, the current owner, Domaine du Roc des Boutires quickly established itself as an essential reference in Burgundy. Located in the heart of the hamlet of Pouilly, facing the famous Roche de Solutré, this independent family estate is run by Édouard Parinet, alongside technical director Brice Laffond. The estate passionately cultivates a vineyard divided into fourteen micro-terroirs, tended with the utmost respect for the plant, in order to reveal all the purity and complexity of the Mâconnais terroirs.
The vineyard
The cuvée comes from a single 0.65-hectare plot located within the Pouilly-Fuissé appellation. Facing south-east at an altitude of around 260 metres, these old Chardonnay vines, averaging 70 years of age, thrive on clay soils mixed with schist and Jurassic limestone. The estate favours sustainable viticulture, inspired by organic and biodynamic principles, with fully manual harvesting to preserve the integrity of the bunches.
Vinification and ageing
Upon arrival at the cellar, the whole bunches are gravity-pressed before undergoing cold static settling at 8°C. The fermentation of this Pouilly-Fuissé 1er cru "Aux Bouthières" 2023 takes place in oak barrels. Ageing then continues on fine lees for 15 months, split between 70% in stainless steel tanks and 30% in French oak barrels from the Tronçais forest, in order to preserve freshness while adding subtle complexity.
