Tasting
Colour
The colour reveals a beautiful pale white-gold hue, enhanced by subtle greenish reflections.
Nose
The aromatic bouquet proves powerful and complex, exhaling notes of citrus fruits and roasted fruits. On aeration, delicate touches of honey and dried white fruits enrich this olfactory palette.
Palate
The attack is rich and unctuous, offering remarkable sweetness despite the wine being dry. This generosity is perfectly balanced by lovely vivacity and a refreshing acidic structure, leading to a finish of exceptional length.
Food and wine pairing
This great white wine pairs wonderfully with noble fish in sauce, such as poached turbot or sea bass in a salt crust. It also enhances creamy white meats, mushroom or saffron risottos, as well as small game dishes such as a rabbit terrine.
Service and storage
To fully appreciate the Domaine du Clos des Fées Blanc 2023, it is recommended to decant it one hour before tasting and to serve it at a temperature of around 11°C. Although already delightful in its youth, this wine will reach its full potential after a few years of cellaring, and can be enjoyed until around 2029.

This wine stands out for its remarkable natural sweetness for a dry wine, the result of the exceptional concentration achieved by the very old vines, as well as for a moderate yet distinctly present acidity that maintains a lovely tonicity.
The elegance and complexity of a great white wine from Roussillon
The estate
Nestled in the heart of Roussillon, Domaine du Clos des Fées was born in 1998 under the impetus of Hervé and Claudine Bizeul, the current owners. Initially cultivated as a passion project, this estate has risen to become one of the region's essential references. Today it spans around forty hectares under production, complemented by a vast protected ecosystem fostering active biodiversity. Combining ancestral methods with innovation, the estate stands out for its rigorous plot-by-plot approach and its commitment to producing wines of remarkable quality, reflecting the full singularity of their Catalan terroir.
The vineyard
Located in the spectacular limestone amphitheatre of Vingrau, the vineyard benefits from the Côtes du Roussillon appellation. The vines, some of them century-old, are planted on clay-limestone terroirs at altitudes ranging between 200 and 400 metres. The predominantly north- and west-facing exposures help preserve a lovely freshness. The estate is characterised by the deliberate scattering of its 112 plots, meticulously tended through intensive canopy management and deliberately low yields to guarantee optimal grape concentration.
Winemaking and aging
The creation of the Domaine du Clos des Fées Blanc 2023 is the subject of meticulous attention. Fermentation is slow and differentiated: in stainless steel tanks for part of the harvest, and in old barrels for the rest. Aging continues on fine lees for five to eight months, accompanied by regular stirring to extract aromatic complexity. Before spring bottling, the wine undergoes gentle fining and light filtration.
Grape varieties
This wine is made from a blend of 90% Grenache Blanc and 10% Grenache Gris.
