Description

Characteristics and tasting notes for the Bourgogne Aligoté "Sous les Roches" Vieilles Vignes 2021 from Domaine du Cellier aux Moines

Tasting

Appearance
The wine reveals a pale, brilliant golden hue, which may show a slightly deeper intensity.

Nose
The nose displays fine complexity, with aromas of white fruit and citrus, such as apple and lemon, intertwined with subtle floral notes. A pronounced minerality, reminiscent of wet stone or chalk, elevates the bouquet.

Palate
On the palate, this white wine offers a broad, creamy texture, perfectly balanced by a lively, saline acidity. The finish stands out for its remarkable length.

Food and wine pairing

Crafted for fine dining, this wine is best enjoyed on its own and should never be used to make a Kir. It pairs beautifully with Asian dishes such as sushi, as well as grilled premium fish, seafood and aged goat's cheeses.

Serving and cellaring

To fully appreciate the Bourgogne Aligoté "Sous les Roches" Vieilles Vignes 2021, serve it at a temperature of 12 to 13°C. Built for ageing, this wine can be enjoyed until around 2031.

The elegance and minerality of a white Burgundy wine

The estate

Although winegrowing on the site dates back to the 12th century and the Cistercian monks, Domaine du Cellier aux Moines as we know it today was founded in 2004. Located in Burgundy, on the hillsides above Givry, the estate is run by Catherine and Philippe Pascal together with their children. The vineyard of around 13 hectares is distinguished by its historic clos and modern facilities, including a unique gravity-flow winery. Certified organic and biodynamic, the estate produces wines of great precision that faithfully express the richness of their terroirs.

The vineyard

This Burgundy wine comes from a selection of old vines tended with the utmost care. The vineyard is farmed according to organic and biodynamic principles, reflecting a deep respect for the soil and biodiversity. The grapes are harvested by hand, allowing the bunches to be carefully selected in the vineyard, followed by a further pass over a sorting table.

Winemaking and ageing

The estate favours a minimal-intervention approach in crafting the Bourgogne Aligoté "Sous les Roches" Vieilles Vignes 2021. After rigorous sorting, the grapes are gently pressed. The juice is moved by gravity within a multi-level winery, limiting mechanical handling to preserve its purity and delicacy.
