A Rare White from Domaine des Perdrix on the Heights of the Côte de Nuits
The Estate
This Domaine des Perdrix, located in Premeaux-Prissey in the Côte de Nuits, was taken over in 1996 by the Devillard family, winegrowers in Burgundy for several generations. Now run by Amaury Devillard, the estate covers around twelve hectares, planted mainly with Pinot Noir and complemented by a few rare plots of Chardonnay. It takes its name from the Nuits-Saint-Georges Premier Cru climat Aux Perdrix, of which it owns almost the entire area, and has established itself as a benchmark among the great wines of the Côte de Nuits, now part of Domaines Devillard.
The Vineyard
This Burgundy wine comes from a 0.45-hectare plot, perched on a plateau between 300 and 400 metres above sea level, above the village of Premeaux-Prissey. Facing due east, the Chardonnay vines are rooted in clay-limestone soil with a predominance of limestone, an unusual terroir for this grape variety in this part of the Côte de Nuits, traditionally devoted to Pinot Noir. Planted in 2009 and then extended in 2017, this confidential plot illustrates the estate's desire to explore a rare expression of the Nuits terroir in the realm of white wines.
Vinification and Ageing
For the production of the Bourgogne Hautes-Côtes de Nuits 2024, the grapes are hand-harvested in small crates, then sorted before being pressed in a pneumatic press. The juice obtained is settled at controlled temperature for 12 to 14 hours, before being transferred by gravity into lightly toasted oak barrels, where alcoholic and malolactic fermentations take place. Ageing then continues in stainless steel tanks, in order to preserve the freshness and purity of the fruit.
Grape Variety
This wine is made from 100% Chardonnay, a rare grape variety in the Côte de Nuits, traditionally dominated by Pinot Noir.
