Description
Characteristics and tasting tips for the Bonnes-Mares Grand Cru 2022 from Domaine Denis Mortet
Tasting
Nose
The bouquet reveals intense aromas of black fruit accompanied by characteristic spicy notes.
Palate
On the palate, this Grand Cru unveils a rich and masculine structure. The tasting reveals excellent freshness and beautiful length, punctuated by a slightly chalky finish. Although seductive in its youth, this wine will fully express its potential after long aging in the cellar.
Food and wine pairings
This Bonnes-Mares pairs perfectly with noble red meats, feathered game and mature cheeses. Its structure and complex aromas also harmonize with mushroom sauce dishes.
Service and storage
The Bonnes-Mares Grand Cru 2022 is best served at a temperature of 16-18°C. Decanting for one hour allows it to express all its aromatic complexity. This wine will reach its peak around 2034 - 2036.
A Burgundy Grand Cru from an exceptional terroir
The estate
Created in 1956 by Charles Mortet in Gevrey-Chambertin, then under the direction of his son Denis from 1993, the Burgundy estate Denis Mortet today spans 16 hectares distributed between Gevrey-Chambertin, Chambolle-Musigny, Vougeot, Marsannay and Fixin. Managed since 2006 by Arnaud Mortet alongside his mother Laurence and his sister Clémence, the estate possesses prestigious plots including the Chambertin, Bonnes-Mares and Mazis-Chambertin Grands Crus.
The vineyard
The Bonnes-Mares comes from a plot located in the center of the Chambolle-Musigny slope, on the famous "white soils". These stony and very limestone soils rest on pure clay, conferring a distinctive minerality to the wine. The vines, averaging 70 years old, cover 35 ares, cultivated according to organic farming principles with horse plowing and exclusively organic amendments.
Winemaking and aging
Manual harvesting in small crates allows for rigorous sorting of the grapes. The vinification of the Bonnes-Mares Grand Cru 2022 is carried out with partial destemming and the exclusive use of indigenous yeasts. Pump-overs and punch-downs are practiced with moderation. Aging takes place for 18 months in oak barrels, with 80% new barrels and 20% barrels of one wine.
Grape variety
100% Pinot Noir.
