Characteristics and Tasting Notes of the Saint-Véran Village "Les Crais" 2022 from Domaine Cordier Père et Fils
Tasting
Appearance
Displaying a luminous golden hue, this wine is enhanced by delicate pale gold reflections.
Nose
The bouquet opens with a chalky, mineral thread, before releasing aromas of stone fruits such as white peach and apricot, intertwined with notes of fresh citrus. Subtle touches of brioche and pastry complete this complex ensemble.
Palate
Balanced and structured, the attack revolves around an elegant minerality. The palate reveals intense flavours of white fruits and citrus, enriched with nuances of almond and hazelnut, extending into a finish of remarkable persistence.
Food and wine pairings
This white wine pairs beautifully with regional specialities such as jambon persillé, but also masterfully accompanies grilled salmon, a turkey escalope with mushrooms, or vegetarian dishes based on asparagus, artichokes or goat's cheese.
Serving and cellaring
For an optimal tasting experience, it is recommended to serve this wine at a temperature between 10 and 12°C. It can be enjoyed now or cellared until around 2032.
The Mineral Expression and Richness of a White Wine from Saint-Véran
The estate
Founded in 1945 in the heart of the Mâconnais, Domaine Cordier Père et Fils is a benchmark producer of Burgundy. Since 1987, Christophe Cordier has passionately led this family estate, which now extends over more than 30 hectares. Spread across a mosaic of over 120 plots, the vineyard stands out for its deep commitment to environmental respect, crowned by certifications in organic and biodynamic farming. The estate is renowned for its meticulous approach, favouring controlled yields to fully express the purity of its terroirs.
The vineyard
The cuvée comes from the "Les Crais" Climat, located within the Saint-Véran appellation. This specific terroir owes its name to the nature of its soils, composed of chalky limestone dating back to the Middle Jurassic. The vineyard is cultivated according to biodynamic principles, with the soils worked by horse to avoid compaction. The vines, pruned in short Guyot style, undergo green harvesting to concentrate the quality of the berries, which are then picked by hand at optimal maturity.
The vintage
The 2022 growing season was marked by contrasting weather conditions. Following a spring that brought episodes of late frost, the summer stood out for its prolonged intense heat, followed by welcome rainfall at the end of the season.
Winemaking and aging
The crafting of this 2022 vintage is based on a philosophy of minimal intervention. Fermentations are triggered exclusively by indigenous yeasts. The wine then benefits from extended aging of approximately 18 months on its original lees, in fine-grained French oak barrels, with the toasting carried out to the estate's own specifications. Bottling is done by gravity, without fining and with extremely light filtration in order to preserve the integrity of the wine.
Grape variety
Chardonnay (100%).
