The colour reveals a medium ruby hue, marked by a delicate transparency.
Nose
The aromatic bouquet opens with a lovely high-altitude freshness, blending wild red and black fruit aromas such as raspberry, cherry and blackberry. Floral nuances of violet and rose intertwine with fine spicy notes and a subtle smoky touch.
Palate
The attack is supple and delicate, revealing an athletic structure carried by lively acidity. The tannins are silky, guiding the tasting toward a persistent finish with floral accents.

The Estate
The estate's history began in 1984, driven by Didier Montchovet, a pioneer of biodynamics in Burgundy. Today, Domaine Boris Champy is run by Boris Champy, an experienced winemaker who has worked at prestigious estates. Located in Nantoux, this twelve-hectare vineyard stands out for its holistic agroecological approach and its Demeter certification, held uninterrupted since its creation. The current owner focuses on showcasing high-altitude terroirs and local microclimates, creating true islands of biodiversity in the heart of the Burgundian hills.
The Vineyard
The "En Bignon" plot is located in the commune of Bouze-lès-Beaune, at an altitude of 421 metres. This terroir in Burgundy rests on highly ferruginous clay-limestone soils, marked by red earth that is well suited to quality vine growing. Farmed organically and biodynamically, the vines benefit from a high planting density and thrive within a preserved ecosystem, surrounded by hedges, dry-stone walls and trees that foster rich biodiversity.
Winemaking and Ageing
The grapes are harvested by hand at optimal ripeness. To craft this Bourgogne Hautes-Côtes de Beaune "Altitude 421 En Bignon" 2024, the winemaking favours gentle extraction using indigenous yeasts, with 50% of the grapes destemmed. Fermentation takes place in oak vats. The wine is then aged for an average of 12 months in 500-litre barrels, around a quarter of which are new oak, to structure the wine while preserving the brightness of the fruit.
