Tasting
Appearance
This white wine shows a clear, pale yellow colour with luminous highlights, hinting at the freshness of this still-youthful vintage.
Nose
The nose stands out for its elegance, blending delicate floral notes with touches of sweet spice, the result of a measured maturation in oak barrels.
Palate
The palate captivates with its generosity and silky texture. The oak, still perceptible, is fine and of high quality, adding structure and depth without ever overpowering the wine's substance.
Food and Wine Pairing
This white Chassagne-Montrachet is an ideal match for noble fish and shellfish, whether salmon, sea bream, sea bass or spiny lobster. It also pairs beautifully with poultry in cream sauce, foie gras or asparagus, for a refined gourmet meal.
Serving and Cellaring
We recommend serving the Chassagne-Montrachet Village "Château de Chassagne-Montrachet" 2023 at a temperature of around 13°C, in order to fully reveal its aromatic complexity and texture. This wine has an ageing potential of approximately 10 years and can therefore be kept until around 2033.
A Rich and Silky Chassagne-Montrachet Village from Domaine Bader-Mimeur
The Estate
Domaine Bader-Mimeur, founded in 1920 in Chassagne-Montrachet, in Burgundy, is a family-owned estate that today farms approximately 8 hectares of vines, including 98% of the Château de Chassagne-Montrachet vineyard. The estate is now run by Nathalie Fossier, manager, alongside her brother Sébastien Fossier, winemaker and oenologist, representing the fourth generation of the family. Certified High Environmental Value (HVE) Level 3, the estate is distinguished by the close proximity of its plots.
The Vineyard
The vineyard from which this cuvée originates lies in the heart of the Chassagne-Montrachet appellation, within the historic Château block, on a clay-limestone soil typical of the Côte de Beaune. The vines, up to 75 years old, are farmed using sustainable viticulture practices, without herbicides, with partial grass cover and mechanical soil cultivation, as part of the estate's HVE Level 3 certification.
Winemaking and Maturation
The Chassagne-Montrachet Village "Château de Chassagne-Montrachet" 2023 cuvée comes from a manual harvest in small crates of 30 kg maximum. The whole bunches are pressed in a pneumatic press, then the juice, cold-settled, is transferred by gravity into oak barrels. Alcoholic fermentation takes place entirely in barrel, using indigenous yeasts, followed by 10 months of maturation in French oak barrels, 20% of which are new, with regular lees stirring.
