Colour
With a beautiful pale, luminous hue, this white wine reveals remarkable brilliance.
Nose
Open and expressive, the bouquet reveals a marked floral dominance of lime blossom, lemongrass, marjoram and peppermint, harmoniously complemented by subtle fruity notes reminiscent of kiwi.
Palate
The attack is smooth before evolving into a mid-palate that is generous, vibrant and displays great mineral freshness. The palate unfolds citrus aromas such as lemon and kumquat, paired with quince and delicate touches of toasted hazelnut. The whole stretches into a long, dry and deeply saline finish, underscored by a noble bitterness.
Food and wine pairing
This great white wine pairs beautifully with seafood such as oysters, a scallop carpaccio or a platter of shellfish. It also enhances delicate fish, whether served raw as tartare, grilled or prepared with a lemon sauce. When it comes to cheese, it works wonderfully with a fresh Munster or a goat's cheese, and pairs perfectly with vegetarian dishes featuring asparagus or light citrus desserts such as lemon tart.
Serving and storage
To fully appreciate the Riesling Grand Cru "Spiegel" Élément Air 2023, it is recommended to serve it between 9 and 11°C in a tulip-shaped glass, without decanting, in order to preserve its aromatic delicacy. This wine can be enjoyed now or cellared until around 2036.

The estate
Founded in 1871 by Jean Dirler in the village of Bergholtz, in Alsace, the Dirler-Cadé estate embodies over a century and a half of winemaking tradition. Now run by Jean and Ludivine Dirler, representing the fifth generation, the estate spans 18 hectares. A pioneer of biodynamics since 1998, the estate cultivates its vines with the utmost respect for the environment. Guided by the motto "Vins naturels, Vins fins" ("Natural wines, fine wines"), the family crafts authentic cuvées that faithfully express the richness and diversity of their terroirs.
The vineyard
Located in Alsace, the terroir of the Spiegel grand cru extends across the mid-slopes of the communes of Guebwiller and Bergholtz, at an altitude ranging between 260 and 315 metres. East-facing, the vines, with an average age of 30 years, benefit from ideal morning sunlight. The soil, of a marl-sandstone and clay-sandy nature, is distinguished by the presence of sandstone pebbles and quartz crystals that reflect the light. Farmed biodynamically, the vineyard benefits from natural grass cover and meticulous ploughing, sometimes carried out with a draft horse on the steepest plots.
The vintage
The year 2023 stood out for its atypical weather conditions, marked by record heat and persistent drought. After a mild, relatively dry winter, the summer season saw extreme temperatures, particularly in June and September. Despite these demanding conditions and significant disease pressure, the marl-limestone soils of the Spiegel grand cru allowed the vines to draw on the necessary water reserves, resulting in a healthy and perfectly balanced harvest.
Winemaking and aging
True to the estate's philosophy, the making of the Riesling Grand Cru "Spiegel" Élément Air 2023 relies on a minimally interventionist approach in the cellar. Fermentation takes place naturally, allowing the terroir and the specific character of the year to shape the profile of the cuvée, without technological intervention, in order to preserve the full purity and authenticity of the juice.
