Description
A fine and elegant Côtes de Provence rosé wine
The estate
Founded by the Order of the Templars in the 13th century and then bequeathed to the Order of the Knights of Malta, Domaine Peyrassol has made its name over the vintages in the production of great Côtes de Provence wines.
In 2001, Philippe Austruy bought the estate and has continued its ancestral history. In 2002, this enthusiast undertook major work to restructure the vineyard and modernise the wine-making infrastructure, with a view to excel in the production of wines that reveal the quality of their terroir. A huge amount of care is given to the vineyard to get the most out of it: the vines are managed organically, cereals are sown between the rows, soil life is developed, plots are selected and the oldest plots are harvested by hand.
The vineyard
Clos Peyrassol rosé is a Côtes de Provence wine made from grapes harvested on one of the most beautiful plots of the estate, exclusively in the best vintages since 2009. The Clos plot, located at the foot of the Templar buildings, takes its name from the low walls that surround it.
The vintage
After a harsh winter, with scattered isolated storms, spring brought a wave of frost and hail which fortunately spared the estate's vineyards. The summer saw more than three months of heat and relative drought.
The wine
2022 is the first vintage to be certified Organic Agriculture.
Winemaking and ageing
Following a delicate pneumatic pressing, the juices were separated before being vinified at a controlled temperature in stainless steel tanks and stoneware jars. Following fermentation, a light racking was carried out in order to keep only the best of the lees.

Tasting
Colour
The wine has a very pale pink colour.
Nose
The aromatic bouquet gives off white flower notes of cherry blossom, citrus fruit and white-fleshed fruit (peach, pear).
Palate
The palate is fresh and generous, delightful in its aromatic richness and with its lasting finish with fine saline and bitter touches.
Food and wine pairing
This Clos Peyrassol 2022 pairs marvellously with fish, done as carpaccio or ceviche.
Storage
Clos Peyrassol 2022 can be enjoyed today, and can be laid down until 2025.
