Tasting

Appearance
Velvety and luminous, the wine shows delicate silvery hues that elegantly catch the light.

Nose
The aromatic bouquet opens with intense notes of exotic fruits and white-fleshed fruits, enhanced by an elegant minerality that brings finesse and complexity.

Palate
The balance between richness and freshness defines this wine. Floral aromas unfold harmoniously, followed by a long, lingering finish with subtle citrus notes, especially lemon.

Food pairing tips

This Provence white wine pairs perfectly with sea urchins and wild asparagus for a refined land-and-sea combination. It also goes beautifully with sushi or calisson ice cream for an original tasting experience.

Serving and cellaring

Serve at 9 to 12°C. While already delicious to enjoy now, it can be cellared until around 2028, developing additional aromatic complexity along the way.

The wine-growing region

This Le Pas du Moine Blanc cuvée is a wine from Côtes de Provence, sourced from vineyards planted on red clay and limestone soils. Its name refers to the path the monks took to reach the Croix de Provence.

Vinification and aging

Harvested at night, the grapes undergo direct pressing. Vinification takes place in concrete tanks, followed by aging for 2 to 4 months in the same vessel.

Vermentino and Ugni Blanc.
