Nose
The nose expresses a characteristic floral bouquet of violet and peony, harmoniously blended with fruity aromas such as blackcurrant, morello cherry and quince. Subtle peppery, musky and cherry stone notes add further complexity.

Palate
The palate is seductive with its delicate texture and remarkable richness. With a robust yet refined tannic structure, this wine offers a profile that is both powerful and elegant.

Food and Wine Pairing

This red wine pairs wonderfully with flavourful meats such as braised pork or a well-marbled beef entrecôte. It will also elevate slow-cooked poultry dishes, whether traditional or spiced with milder flavours such as curry or tandoori. For bolder pairings, it will perfectly complement paella, tapas or spring rolls, as well as characterful cheeses such as Chaource, Comté or Époisses.

Service and Storage

To fully appreciate the complexity of this Fixin Village 2023, it is recommended to serve it at a temperature between 13 and 15°C. This wine requires a little patience in the bottle to fully develop and can be enjoyed until at least 2033.

The Richness and Precision of a Fixin Wine by Château de Marsannay

The Estate

Built in 1990 at the gates of Dijon, the Château de Marsannay is located at the northern entrance to the famous Route des Grands Crus in Burgundy. Acquired in 2012 by Olivier Halley, the estate has undergone a true renaissance. Under the direction of Sylvain Pabion since 2015, the 40-hectare estate has adopted a bespoke, plot-by-plot approach along with rigorous agroecological practices, earning organic certification in 2022. Today, Château de Marsannay stands out for its commitment to faithfully expressing the identity of its terroirs.

The Vineyard

This Fixin wine comes from a discreet 0.25-hectare plot with an ideal south-facing exposure. Located at the bottom of the slope, the vines thrive on clay-limestone soils mixed with scree cones. This specific terroir gives the wine a distinctive balance, combining lovely freshness with approachable maturity. The vineyard is cultivated according to organic farming principles, with soil work carried out using horses and the use of plant decoctions to preserve biodiversity.

The Vintage

The 2023 vintage stands out for its generosity and remarkable consistency. Following a carefully managed growing cycle, the end of summer offered particularly sunny conditions, promoting rapid and optimal ripening of the berries. To preserve all the aromatic freshness of the juices, harvest began on 9 September under mild weather conditions.

Winemaking and Aging

For this Fixin Village 2023, the finest bunches are vinified as whole clusters. The estate favours a long maceration of two to three weeks, punctuated by infusions and gentle pump-overs to extract aromas softly without stressing the tannins. The wine is then transferred to underground cellars at 15°C for malolactic fermentation. Aging takes place in oak barrels, 20 to 25% of which are new, for 14 to 16 months before bottling.
