Tasting
Colour
The robe reveals a deep, intense ruby red hue, enhanced by a velvety and particularly brilliant sheen.
Nose
The aromatic bouquet opens with scents of fresh red fruits such as cherry, strawberry and raspberry. With aeration, a fine complexity emerges through floral notes of violet, complemented by spicy and mineral nuances reminiscent of pepper, clove and graphite.
Palate
The attack is elegant, marked by a lovely freshness. The mid-palate offers a silky texture and a beautiful fullness, supported by powdery, refined tannins. The whole displays a remarkable balance between fruit roundness and vivacity, extending into a persistent finish with mineral accents.
Food and wine pairing
This red wine pairs wonderfully with roasted duck breast, grilled beef rib or game meats such as venison. It also goes very well with poultry served with mushrooms or foie gras, as well as semi-hard cheeses such as Tomme de Savoie.
Service and storage
To fully enjoy its potential, it is recommended to serve the Mercurey Village "Cuvée Hors Ligne" 2023 at a temperature between 15 and 16°C. Ready to drink from now, this Vin de France boasts a fine structure that will allow it to age in the cellar until around 2043.
The elegance and complexity of a great Mercurey wine
The estate
Built at the beginning of the eighteenth century, Château de Chamirey became a fully-fledged wine estate in 1934 under the impetus of the Marquis de Jouennes, who initiated estate bottling. Located in Burgundy, this key reference now spans thirty-seven hectares. Currently led by Amaury and Aurore Devillard, who represent the third generation at the helm of the estate, the property stands out for its environmentally respectful approach and its meticulous enhancement of its terroirs.
The vineyard
This cuvée comes exclusively from the Les Chavances plot, a 1.15-hectare vineyard located within the Mercurey appellation. Planted in 1988 at high density, these vines flourish at the base of a natural amphitheatre offering an ideal microclimate. The soils, composed of clay and limestone with a strong presence of iron and silt, are cultivated according to the principles of sustainable farming, thereby fostering an authentic expression of the terroir.
The vintage
2023 benefited from particularly favourable weather conditions. A mild spring preceded a warm summer season, balanced by cool nights. Rainfall arriving at the opportune moment allowed the berries to reach optimal ripeness.
Winemaking and aging
After manual harvesting and rigorous sorting, the grapes are destemmed. Vinification begins with a cold pre-fermentation maceration, followed by natural fermentation through indigenous yeasts, punctuated by punching down and pumping over. The Mercurey Village "Cuvée Hors Ligne" 2023 is aged for twelve months in oak barrels, 40% of which are new. The wine is then refined for four months in stainless steel tanks before bottling.
