Appearance
The wine displays a bright and radiant yellow hue.
Nose

The estate
The Château d'Estoublon, founded in 1489, was for a long time owned by the Counts of Les Baux. Acquired in 1999 by Ernest Schneider, it has been managed since 2019 by the Courbit, Prats (former owners of Château Cos d’Estournel), and Bruni-Sarkozy families.
Vineyard
The estate covers 300 hectares, with 17 dedicated to vines and 120 to olive trees. It is managed using sustainable and organic viticulture on deep soils combining clay and limestone.
The wine
This cuvée from the Coteaux d'Aix-en-Provence comes from vineyards planted between 250 and 300 meters in altitude on clay-limestone-sandy soils.
Vinification and aging
After harvesting mainly at night to preserve the aromatic freshness of the grape varieties, the grapes are destemmed and then pressed. Cold settling for 3 days before vinification in stainless steel tanks for 3 to 4 weeks. The wine is aged on the lees.
