Tasting
Color

The estate
The Château d'Estoublon, founded in 1489, was long owned by the Counts of Baux. In 1999, it was acquired by Ernest Schneider and has been run since 2019 by the Courbit, Prats (former owners of Château Cos d’Estournel) and Bruni-Sarkozy families.
Vineyard
The estate covers 300 hectares, including 17 hectares of vines and 120 hectares of olive trees. It is farmed using sustainable and organic viticulture on deep clay and limestone soils.
The wine
This cuvée from Coteaux d'Aix-en-Provence comes from vineyards planted between 250 and 300 meters above sea level on clay-, limestone-, and sand-rich soils.
Vinification and aging
After harvesting, mainly carried out at night to preserve the aromatic freshness of the grape varieties, the grapes are destemmed and then pressed. Cold settling takes place over 3 days before a 3- to 4-week fermentation in stainless steel tanks. Aging is carried out on the lees.
