Tasting

Appearance
The wine displays a brilliant hue with subtle green highlights.


Nose
The nose charms with its freshness and softness. It reveals aromas of fennel delicately mingled with notes of white peach, toasted brioche, and fresh butter.

Palate
The palate opens with flavors of fully ripe yellow fruits. It is carried by a natural acidity that balances a beautiful breadth, a hallmark of aging in oak foudres.

The estate

Château d'Estoublon, founded in 1489, was long owned by the Counts of Les Baux. Acquired in 1999 by Ernest Schneider, it has been managed since 2019 by the Courbit, Prats (former owners of Château Cos d’Estournel), and Bruni-Sarkozy families.

Vineyard
The estate covers 300 hectares, with 17 dedicated to vines and 120 to olive trees. It is managed according to sustainable and organic viticulture, on deep soils combining clay and limestone.

The wine
This “1489” blanc cuvée is a Coteaux d'Aix-en-Provence wine produced from vineyards located between 380 and 390 meters in altitude, facing north on deep clay-marl soils.

Vinification and aging

Manual harvest with rigorous sorting of the crop. Pressing and static cold settling. Fermentation in 500L barrels for 3 weeks. No malolactic fermentation to preserve freshness. Aged in barrels for 5-6 months.
