Tasting notes

Color
The color reveals a pale yellow hue with golden highlights, reminiscent of straw.

Nose
The bouquet is complex, blending floral scents of jasmine and orange blossom with citrus notes such as lemon zest. These are complemented by herbaceous touches of fresh oregano and tomato leaf, along with subtle mineral nuances.

Palate
The attack is lively and bright, revealing a wine of great finesse. The palate offers a beautiful balance carried by a pleasant acidity, unveiling citrus flavors, floral notes, pronounced minerality, and a delicate touch of almond. The finish stands out for its tangy freshness.

Food and wine pairing

The estate

Founded in 1959 by Alex Roten in the commune of Sierre, the Caves du Paradis estate is a family-run operation emblematic of the Valais region in Switzerland. Now led by Olivier Roten, representing the third generation, the estate distinguishes itself through its commitment to sustainable viticulture and respect for its alpine terroir. With a vineyard spanning ten to twenty-five hectares, the estate recently reached a major milestone by obtaining organic certification, confirming its dedication to producing authentic wines.

The vineyard

Located in the heart of Valais, the vineyard benefits from a dry continental climate and exceptional sunshine of nearly three hundred days per year. The vines, planted between 550 and 800 meters in altitude on steep, south-facing slopes, grow in poor, rocky, and calcareous soils. Due to the steep incline of the slopes, harvesting is done entirely by hand, ensuring a rigorous selection of grape bunches.

Winemaking and aging

The production of the Avalanche Fendant 2025 begins with whole-bunch pressing to preserve the delicacy of the aromas. Fermentation then takes place in concrete tanks at controlled temperatures, followed by a partial malolactic fermentation to soften the natural acidity. Finally, the wine undergoes a year of aging in concrete tanks before bottling.
