Tasting
Colour
This red wine displays an elegant, clear ruby to garnet hue, with slightly evolved highlights and a remarkable brilliance.
Nose
Subtle and complex, the bouquet weaves aromas of black and red fruit, such as blackcurrant and cherry, with notes of undergrowth, damp earth and cedar. The whole is underpinned by perfectly integrated oak, revealing discreet hints of vanilla and toast.
Palate
The attack is supple and opens onto a velvety texture. Carried by lovely freshness and exceptionally fine tannins, the palate offers a body that is both full and elegant, revealing flavours of raspberry and strawberry that stretch into a long finish.
Food and wine pairings
This great wine pairs beautifully with roast or grilled red meats, such as a herb-crusted rack of lamb or a rib of beef. It also goes very well with mushroom-based dishes, such as a porcini risotto, as well as roast poultry or aged hard cheeses.

The elegance and finesse of a great Pauillac wine
The estate
Located in Pauillac, in the renowned Bordeaux region, Château Lafite-Rothschild boasts a winegrowing history dating back to the Middle Ages, with a structured vineyard established as early as 1680. Ranked Premier Grand Cru Classé in 1855, the estate was acquired by the Rothschild family in 1868. Today, the property is run by Saskia de Rothschild, alongside Jean-Guillaume Prats. Driven by a genuine obsession with terroir, this iconic estate combines tradition with agronomic innovation, notably through a transition to organic farming and biodynamic practices to preserve its unique ecosystem.
The vineyard
The vineyard thrives at the heart of the Pauillac appellation, under a temperate oceanic climate. The vines, around forty years old, are planted on soils of fine, deep gravel mixed with wind-blown sand, resting on a Tertiary limestone subsoil. This geology provides optimal drainage. The estate places great importance on biodiversity, incorporating hedgerows, cover crops and a herd of cows as part of a comprehensive agroecological approach.
The vintage
2007 proved to be a delicate and demanding year. The weather was marked by a summer cooler than the usual average for the region, followed by early rainfall just before the harvest. These climatic conditions called for constant vigilance and an extremely rigorous selection of berries to guarantee optimal quality.
Vinification and ageing
The berries undergo highly precise plot-by-plot vinification in wooden, stainless steel or concrete vats, in order to respect the identity of each lot. After blending, Carruades de Lafite 2007 is aged in French oak barrels that held the Grand Vin the previous year, resulting in a harmonious and subtle oak structure.
Grape varieties
This wine is made from a blend of almost equal proportions of Merlot and Cabernet Sauvignon, complemented by small touches of Cabernet Franc and Petit Verdot.
