The estate
A fine expression of the Chablis terroir since 1815, Domaine Billaud-Simon is one of those great references that gives Burgundy its noble reputation. Domaine Billaud-Simon is committed to expressing the quintessence of the Chablis terroir, by giving a unique personality to the Chardonnay varietal, thanks to the Kimmeridgian limestone. Powerful and racy, the Chablis wines by Billaud-Simon are bearers of a singular identity that blends freshness and purity.
The vineyard
Planted on the left and right banks of the Serein river, in the heart of the Chablis appellation, the estate covers 17 hectares of prestigious plots, including four Grands Crus (Les Clos, Vaudésir, Les Preuses and Les Blanchots) and four Premiers Crus (Montée de Tonnerre, Fourchaume, Mont de Milieu and Les Vaillons). Domaine Billaud-Simon maintains and cultivates an exceptional vineyard, planted mainly with 50-year-old vines that reveal the richness and authenticity of their terroir.
The wine
Domaine Billaud-Simon's 2015 "Vaulorent" is a Chablis 1er Cru whose name refers to Laurent who once owned the entire valley. The soils are hallmarks of the appellation and date from the middle and upper Kimmeridgian age. One can also find marl and limestone soils with Exogyra Virgula (a fossilised mollusc dating from the Jurassic and Cretaceous periods).
Vinification and ageing
The wine is aged for 14 to 16 months - depending on the vintage - in stainless steel vats. This ageing process preserves the freshness and minerality of the wine. It is then racked twice before bottling in late autumn.
