A Chablis Premier Cru of remarkable intensity and precision

The estate

Domaine Long-Depaquit is owned by the House of Albert Bichot, based in Beaune and managed by Albéric Bichot. This family-owned Burgundy company, with several generations of winemakers, is today renowned for the precision of its vinification and its high quality standards. Present in Burgundy's finest terroirs, it places great importance on accurately expressing the identity of each Climat, particularly through its various estates, including Long-Depaquit in Chablis.

The vineyard

The Chablis Premier Cru Montée de Tonnerre vineyard is located on the right bank of the Serein, opposite the Grand Cru Blanchots. The west-facing vines grow on medium to steep slopes on shallow clay-limestone soils resting on a subsoil of Kimmeridgean marl limestone with veins of blue clay. The name of this 0.40-hectare Climat comes from the old Roman road that led up the hill towards Tonnerre.

Winemaking and ageing

The harvest for the Chablis Premier Cru "Montée de Tonnerre" Domaine Long-Depaquit 2022 is carried out by hand with strict sorting of the grapes. Slow and moderate pressing is followed by alcoholic fermentation and ageing on fine lees in 4 to 5-year-old oak barrels for 10 months. The wine then benefits from a final ageing period of 2 months in stainless steel tanks.
