Tasting notes
Nose
The nose opens with a bouquet of red and black fruits, accompanied by floral notes of peony, rose and violet over a lightly spiced backbone. With time, these aromas evolve towards more complex notes of undergrowth and leather.
Palate
The palate is rich, full and fleshy, carried by velvety tannins that bring suppleness and a rounded texture. The finish is refined and distinguished by remarkable aromatic persistence.
Food and wine pairings
This wine pairs beautifully with roasted meats or meats in sauce, such as beef, lamb, pork, game or duck, as in a saddle of lamb with herbs. It also goes very well with medium to full-flavoured cheeses.
Serving and cellaring
The Bonnes-Mares 2024 is ideally served at a temperature of 16 to 17°C. With exceptional ageing potential, it can be cellared until around 2031-2034.

The estate
Founded in 1831 by Bernard Bichot in Monthélie, Maison Albert Bichot is today an independent négociant house based in Beaune, in Burgundy. At the head of six estates spread from Chablis to Beaujolais, it cultivates more than 100 hectares of vines and holds the status of négociant-vinificateur-éleveur. Led since 1996 by Albéric Bichot, representing the sixth generation of the family, the house is committed to sustainable and organic viticulture, while continuing its historic role as a partner of the Hospices de Beaune.
The vineyard
The Bonnes-Mares climat extends mainly across the commune of Chambolle-Musigny, with a portion in Morey-Saint-Denis, in the heart of the Côte de Nuits. The vines are planted on siliceous clay soils, resting on limestone slabs and then white marls, a terroir that gives Pinot Noir power, body and ageing potential, without sacrificing the finesse characteristic of this sector.
Vinification and ageing
The grapes for the Bonnes-Mares 2024 are harvested by hand, then sorted on arrival at the winery so that only the finest berries are kept. Fermentation maceration lasts 18 to 21 days in temperature-controlled wooden vats, allowing a gradual and controlled extraction. The wine is then transferred by gravity to the cellars, where it is aged for 16 to 18 months in oak barrels, 40 to 50% of which are new, contributing to its structure and the complexity of its bouquet.
Grape variety
This wine is made from 100% Pinot Noir, the only grape variety permitted in the Bonnes-Mares Grand Cru appellation.
