The 2021 Chablis Grand Cru Bougros is one of the richer, more gourmand wines in the range, revealing aromas of peach, orange, white flowers and freshly baked bread. Full-bodied, fleshy and ample, it's a broad, mouth-filling Chablis with bright acids and a precise, saline finish. This has turned out especially well.

TOP QUALITY PRODUCER The Cote de Bouguerots is a 2.1ha part of the Bougros climat, with some distinctive characteristics. On very steep slopes (up to 30%) the clay/gravel soils are low-yielding and lead to intense, ageworthy wines. Much more mineral in terms of both perfume and texture on the palate, citrus fruit is more to the fore here with plenty of acidity suggesting the wine needs several years in bottle before opening. Great precision and laser-like focus. A very fine grand cru.

The richness and amplitude of a Chablis Grand Cru wine

The estate

Founded in 1959, the William Fèvre estate has become an essential name among Chablis wines across the vintages. This illustrious Burgundy estate became part of the Henriot group in 1998.

William Fèvre looks after an exceptional terroir of 78 hectares of vines, including 15.9 hectares classified as Premier Cru and 15.2 as Grand Cru. Certified HVE (High Environmental Value) since 2015, this Burgundy vineyard, through its mosaic of more than 90 distinctive plots, enhances all the richness and diversity of the Chablis terroir.

The vineyard

"Bougros" Domaine 2021 from William Fèvre is a Chablis wine that stems from a vineyard of 6.23 hectares placed at the far north-west of the Grand Crus terroir. Facing south-west, the vines are planted between 130 and 170 metres of altitude on quite deep soils made up of clay and marl.

Winemaking and ageing

The grapes were harvested by hand and vatted through gravity. A short pneumatic pressing was followed by a light static settling. Alcoholic and malolactic fermentations were carried out for 50 to 60% of the must in French oak barrels aged 6 years on average, and in small stainless steel vats for the remainder of the harvest. The wine was aged for 14 to 15 months, including 5 to 6 months on fine lees, in the same containers as the fermentations.
