Tasting
Appearance
This wine reveals a ruby red colour that is both deep and remarkably intense.
Nose
The aromatic bouquet is highly complex, opening with aromas of black fruits such as plum, blackberry and blackcurrant. The whole is subtly enhanced by hints of rosemary, a mineral thread as well as balsamic notes inherited from its time spent in oak.
Palate
On the palate, the texture is rich, ample and full of elegance. It is underpinned by tannins with a very fine grain, offering remarkable persistence and a long finish.
Food and wine pairings
This cuvée will ideally accompany red meats, slow-cooked stews, oven-baked fish or a selection of matured cheeses.
Serving and cellaring
This 2022 vintage is officially recognised for its very strong cellaring potential, allowing it to develop beautifully in the cellar over time.

A great wine of character from the heights of Vallegarcia
The estate
Founded in 1999 with the planting of its first vines, the Vallegarcía estate extends over 50 hectares in the Montes de Toledo, in Castilla-La Mancha. This family-owned property stands out for its exceptional high-altitude terroir. Officially recognised as a protected designation of origin, the estate embodies a modern vision of Spanish viticulture. The estate produces high-quality wines, combining the elegance of international grape varieties with the singularity of a unique continental climate.
The vineyard
Hipperia is a wine from Vallegarcía produced from a vineyard managed according to the principles of sustainable viticulture. The vines grow under a continental climate, perched at an altitude of 850 metres on poor, acidic and highly evolved soils. For this specific cuvée, the grapes are meticulously selected and come from nine distinct plots on the estate.
Winemaking and ageing
After harvests carried out entirely by hand, the berries are vinified with care. The final blend is decided in November, once fermentation is complete. The wine is then aged in its definitive blend, rather than variety by variety, for 18 months in barrels. Finally, it benefits from an additional ageing in bottle of at least 12 months before being released.
Grape varieties
This wine from Castilla-La Mancha is made from a blend of 51% Cabernet Franc, 46% Cabernet Sauvignon and 3% Merlot.
