The Making of the Apricot Eau de Vie
This Apricot Eau de Vie is the result of meticulous craftsmanship, highlighting exceptional raw materials. The apricots used come exclusively from Tain l'Hermitage, a terroir renowned for the quality of its fruit.
To preserve aromatic purity, the preparation process is entirely manual. Each apricot is hand-pitted, a crucial step given that the stone accounts for approximately 30% of the fruit's total weight. This rigorous method avoids any unwanted bitterness and concentrates the aromas in the flesh of the fruit.
The generosity of this production is reflected in its yield: it takes around 15 kg of fresh apricots to produce a single 50 cl bottle. Distillation is then carried out using steam, a gentle technique that respects the fragility of the apricot's aromas and ensures optimal flavour extraction. Finally, the care given to this spirit extends right through to its packaging, with each bottle hand-sealed in orange wax, the unmistakable visual signature of this exceptional product.
