Description
Gin Passage, the refinement of a French gin by Distillerie de Paris
Distillerie de Paris: the still that awakened the capital
Distillerie de Paris was founded in 2015 in the heart of the 10th arrondissement, on rue du Faubourg Saint-Denis, under the impetus of brothers Nicolas and Sébastien Julhès, who still lead the house today. It is the first legal distillery to be established within the city walls in nearly a century, breathing new life into a forgotten craft. Coming from the world of fine food and gastronomy, the two brothers see Paris as a veritable cultural terroir of creation, nourished by the gastronomic diversity and olfactory heritage of the neighbourhood. Equipped with a custom-built Holstein still, the distillery produces gins, flavoured vodkas, rums, brandies and aged spirits, in a creative-laboratory spirit attentive to the selection of raw materials. As French spirits, the creations of Distillerie de Paris embody a demanding artisanal vision and a contemporary exploration of aromas.
Gin Passage: a discreet reference in the Parisian catalogue
This Gin Passage is a gin crafted by Distillerie de Paris, listed as a "French Gin" by several specialist merchants, including Millesima. This spirit is offered in a 50 cl bottle, with no age statement, in keeping with the prevailing practice for this category of spirits. Its place within the Distillerie de Paris range naturally aligns it with the philosophy of the house, which conceives each creation as a singular interpretation of taste, born from the encounter between a rigorous selection of raw materials and an artisanal distilling know-how practised in the workshop of Paris's 10th arrondissement.
While the precise details of its botanical composition are not publicly documented, this Gin Passage belongs to a range in which each reference claims its own identity, built around a versatile Holstein still and an experimental approach to flavour. Distributed notably through the wine merchant Millesima, this Gin Passage illustrates the reach of Distillerie de Paris and its ability to carry beyond the capital's borders the pioneering spirit of a still reinstalled in the heart of Paris after a century of prohibition.
