Tasting
Appearance
This wine displays a particularly deep colour with purple and magenta hues. Its core is impenetrable, yet it reveals superb, luminous highlights.
Nose
Remarkably expressive and deep, the bouquet opens with intense aromas of black and blue fruits such as blackcurrant, blueberry, blackberry and ripe plum. It then gains complexity with hints of aniseed, black olive, rhubarb and graphite. The ageing reveals itself through seamlessly integrated oak notes of cedar, sandalwood, cigar box, vanilla and dark chocolate.
Palate
The palate shows remarkable presence and great density without ever feeling heavy. The texture is fine and elegant, supported by ripe, precise and perfectly integrated tannins. The balance between the power of the fruit and a vibrant acidity that brings great energy is masterful. Flavours of blue fruits, cocoa and spice stretch out into a finish of exceptional length.
Food and wine pairing
This great red wine calls for rich, flavoursome meats. It will pair beautifully with roast suckling pig, a fine cut of grilled dry-aged beef, or game such as venison in a reduced sauce. Roast lamb with mushrooms or truffles would also be an excellent choice. At the end of the meal, it will enhance aged hard cheeses such as a mature Comté or a Cheddar. Overly delicate or heavily spiced dishes are best avoided.
Serving and cellaring
To unlock its full complexity, a long decanting of several hours before serving is essential. The ideal serving temperature is between 16 and 18°C. Built for very long ageing, Bin 707 Cabernet Sauvignon 2024 is a wine for long-term cellaring, expected to reach its peak between approximately 2028 and 2060.

The estate
Founded in 1844 by Dr Christopher Rawson Penfold and his wife Mary, Penfolds is a true winemaking icon in Southern Australia. Originally focused on wines for medicinal purposes, the estate has evolved into a global benchmark, renowned for its mastery of multi-regional blending. Now led by Chief Winemaker Peter Gago, this Australian estate belongs to the Treasury Wine Estates group. It stands out for its uncompromising standards, never hesitating to suspend production of its greatest cuvées if the quality of the grapes is not deemed optimal.
The vineyard
True to the House philosophy, the grapes come from several outstanding terroirs across Southern Australia. For this release, the fruit was rigorously selected from the regions of Coonawarra, the Barossa Valley and Padthaway. This multi-regional approach combines the structure and freshness of Coonawarra with the generosity and depth of the other areas, ensuring remarkable stylistic consistency.
The vintage
Weather conditions in 2024 were particularly favourable, resulting in moderate vine vigour. This growing season produced small berries with excellent concentration and optimal phenolic ripeness. Coonawarra Cabernet proved exceptional that year, delivering a tannic structure that was both firm and highly precise.
Winemaking and ageing
In keeping with the House style, Bin 707 Cabernet Sauvignon 2024 benefits from extended ageing. The wine was matured for 16 months exclusively in 100% new large-format American oak barrels (hogsheads). This choice of ageing entirely in new oak shapes the power and aromatic complexity that define this exceptional cuvée.
