Appearance
The wine reveals a deep red hue, enhanced by delicate purple highlights.

Nose
Intense and remarkably expressive, the nose unveils a bouquet of red and black fruits such as morello cherry, redcurrant and wild raspberry. The whole is harmoniously underlined by characteristic notes of garrigue and thyme.

Palate
Combining power and airy elegance, the palate seduces with its fruity and indulgent profile. Boasting a deep and refined structure, this wine unfolds tannins of great roundness and remarkable finesse, leading to a vibrant finish.

Food and wine pairings

This red wine pairs wonderfully with Mediterranean cuisine and slow-cooked dishes. It will ideally accompany a gardianne de taureau, a herb-roasted shoulder of lamb, a duck leg or pasta with a rich tomato-based sauce.

Serving and cellaring

To fully appreciate the Les Vignes Oubliées 2024 cuvée, it is recommended to decant it one to two hours before tasting and to serve it at a temperature of 16 to 17°C. Approachable from its youth, this wine for laying down can rest in the cellar and be enjoyed until around 2036.

The estate

Born in 2008 from a desire to safeguard old high-altitude parcels destined for abandonment, the Les Vignes Oubliées estate quickly established itself as an essential reference in the Languedoc. Located in Saint-Jean-de-la-Blaquière, the property extends over 15 hectares farmed organically. Now run exclusively by Jean-Baptiste Granier, the estate perpetuates a farming philosophy respectful of the living world. By blending Mediterranean generosity with remarkable freshness, the estate produces distinctive wines, aged in a singular manner within a natural cave, that sublimate the expression of their terroir.

The vineyard

This red wine from the Terrasses du Larzac comes from very old vines with an average age of 45 years. Planted at altitude, between 300 and 400 metres in the commune of Saint-Privat, the vineyard benefits from a strong diurnal temperature range that preserves the acidity of the grapes. The vines flourish on a complex geological mosaic composed of schist, sandstone and clay-limestone soils. The entire estate is certified organic, involving rigorous soil work, the absence of chemical weedkillers and exclusively manual harvesting.

Winemaking and aging

After meticulous sorting in the vineyard and at the winery, the grapes undergo partial destemming. Vatting extends over 15 to 20 days with strict temperature control for a gentle extraction. The Les Vignes Oubliées 2024 cuvée is then aged for 10 to 12 months in demi-muids, barrels and large casks. This crucial stage takes place in the heart of a natural cave, a former oil mill offering perfectly stable temperature and humidity. The wine finally rests for two months in bottle before its release.

Grape varieties

This wine is made from a blend of Grenache (around 60%), Syrah (around 20%) and Carignan (around 20%), completed by a touch of Cinsault.
