Tasting
Colour
This white wine displays a pale yellow hue, brightened by subtle silvery highlights.
Nose
The aromatic bouquet opens with delicate notes of white flowers and acacia. It then moves towards aromas of white- and yellow-fleshed fruit such as apple, pear and lemon, enhanced by fine herbaceous touches and a hint of honey.
Palate
The palate stands out for its precision and vibrancy. Driven by lovely acidic tension and a very distinct chalky minerality, it offers an elegant texture that stretches into a long, mouth-watering and delicately saline finish.
Food and wine pairings
This wine pairs perfectly with white fish, seafood or a goat's cheese salad. It will also make a wonderful match for white meats in a creamy mushroom sauce, or a ceviche.
Serving and cellaring
To fully appreciate this Chablis 1er Cru "Vau de Vey" 2024, serve it at a temperature between 11 and 12°C. This wine can be enjoyed in its youth, but it will continue to develop gracefully in the cellar until around 2030.
The elegance and mineral tension of a great Chablis
The estate
The story of Maison Jean-Marc Brocard officially began in 1974 in Préhy, in the heart of Burgundy. Founded by Jean-Marc Brocard with just one hectare, the estate now extends over some 200 hectares. A pioneer in environmental stewardship, the house is renowned for its early commitment to organic and biodynamic farming. Today, Julien Brocard, the founder's son, runs the estate as managing director, carrying on the family philosophy of expressing the purity and diversity of Chablis terroirs with great precision.
The vineyard
The "Vau de Vey" climat is a distinctive terroir within the Chablis Premier Cru appellation, located on the left bank of the Serein. Facing south-east, the vines, around thirty years old, are rooted on very steep slopes, making manual work essential. This particularly cool microclimate, swept by northerly winds, encourages slow ripening of the grapes. The soils, made up of thick Kimmeridgian marl rich in marine fossils, give this wine its characteristic mineral signature and tension.
Winemaking and ageing
The Chablis 1er Cru "Vau de Vey" 2024 begins with a temperature-controlled alcoholic fermentation (between 18 and 20°C) using indigenous yeasts, followed by full malolactic fermentation. To preserve the purity of the fruit and the identity of the terroir, the house uses no oak barrels. The wine is aged on fine lees in stainless steel tanks for around fourteen months, which lends it complexity and a lovely texture.
